Imagine soft, chewy brown sugar cookies, bursting with the refreshing taste of fresh mint. Now, add in just the right amount of roughly chopped rich chocolate chunks. These chocolate chunk cookies with fresh mint are the epitome of summer’s sweet indulgence, offering a cool and minty twist on the classic brown sugar cookie. If your backyard garden or porch planters are overflowing with fresh mint, or you just so happen to stumble upon gorgeous fresh mint at your local market or grocery store, these cookies are a must-bake.
There is pretty much always a huge pot of fresh mint on our back porch. Now, I will admit that sometimes that pot of mint might not look the greatest, and nine times out of ten, it’s because I’ve either forgotten to water it during the hot summer months or failed to trim it back before it’s become overly leggy. When it comes to watering plants, I’m usually all-in or completely absent. This year, however, I’ve been somewhat bound and determined to make use of our fresh mint before full-on plant absenteeism sets in. And, for once, instead of using the mint to make a rather boring pitcher of iced tea or homemade ice cream, I decided to bake up a batch of cookies using one of our newest recipes for Simple Brown Sugar Cookies (Soft & Chewy) as inspiration. Even my dear, sweet B.O.B. Bob, the hater of all things mint and chocolate combined, ate more than his fair share of these minty chocolatey cookies. And that’s pretty much the highest praise a girl can get. So, if you just so happen to be looking for a new take on a chocolate chunk cookie for summer, this is definitely a recipe you’re going to want to consider. I mean, if B.O.B. Bob likes a cookie with both mint and chocolate, chances are that you’ll for dang sure love these sweet mint and chocolate brown sugar cookies just as much.
Ingredients:
- 1/2 Cup Unsalted Butter, Softened
- 1 Cup Light Brown Sugar, Packed
- 1 Egg
- 2 Teaspoons Vanilla
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Kosher Salt
- 1 1/2 Cups All-Purpose Flour
- 1 (3.5-oz) Chocolate Bar, Roughly Chopped
- 1/2 Cup Fresh Mint, Finely Chopped
- Demerara Sugar
Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream the butter and brown sugar together for 3 minutes on medium speed.
- Add the egg; mix for 30 seconds on medium speed.
- Add the vanilla; mix for 30 seconds on medium speed.
- Add the baking soda and salt; mix for 30 seconds on medium speed.
- Slowly add the flour 1/2 cup at a time on low speed. Mix until just combined.
- Fold the chopped chocolate and mint into the cookie dough until evenly distributed.
- Use a cookie scoop or tablespoon to scoop the cookie dough out onto a Silpat or parchment paper-lined baking sheet. Top each cookie with a little sprinkle of demerara sugar.
- Bake for 12 minutes.
Suggestions:
- I used one bar of Noi Sirius 56% Bitter Sweet Chocolate Icelandic Chocolate for these cookies, however, you can use any type of chocolate you prefer. I highly suggest a bar of bittersweet or dark chocolate for this recipe.
- Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.
- This recipe will yield approximately 2 dozen cookies. It’s an easy recipe to double if you so desire.
Improvements:
- Replace the chocolate chunks with chocolate chips or M&M’s.
- Fold chopped pecans or walnuts into the cookie dough.
- Replace the demerara sugar with colorful sprinkles or sanding sugar.
