There are two flavors that I am not the biggest fan of; white chocolate and coffee. And yet, somehow, I totally fell in lust with this darling little cookie that contains both of those flavors I often find myself completely despising. So what does that tell you? That tells you that this is one heck of a dang good cookie that almost anyone will go cuckoo for cocoa puffs over. Don’t believe me? Whip up a batch and see for yourself. And, as an added bonus, you’ll discover that they are just as pretty as they are scrumdiddlyumptious. ‘Cause let’s just be honest y’all, a pretty swirl on top of a cookie is almost impossible to resist, right?

Ingredients:

Cookie Dough:

  • 1 Cup of Unsalted Butter, Softened
  • 1 1/2 Cups Granulated Sugar
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Kosher Salt
  • 1 Egg
  • 1 Tablespoon + 1 Teaspoon Baileys Irish Cream
  • 1 Teaspoon Vanilla
  • 2 1/4 Cups All-Purpose Flour

Decoration and Baking:

  • 1 Tablespoon + 2 Teaspoons Espresso Powder
  • 1/2 Cup Granulated Sugar
  • Hershey’s Kisses Hugs, Unwrapped

Directions:

Cookie Dough:

  1. In a large mixing bowl, cream the butter and sugar together on medium speed for 2 minutes.
  2. Add the baking powder and salt; mix for 30 seconds.
  3. Add the egg; mix for 30 seconds.
  4. Add the Baileys Irish Cream and vanilla; mix for 30 seconds.
  5. Add the flour and mix on low until just incorporated.

Decoration and Baking:

  1. After you mix the cookie dough, preheat the oven to 350 degrees.
  2. In a small bowl, combine the espresso powder and granulated sugar.
  3. Roll the dough into 1-inch balls. Roll each ball of cookie dough into the espresso powder and sugar mixture until well coated. Place each coated ball onto a Silpat or parchment paper-lined baking sheet.
  4. Bake for 9 to 11 minutes. The cookies should be puffed and no longer wet in appearance.
  5. After you have removed the cookies from the oven, immediately press an unwrapped Hershey’s Kisses Hug into the center of each cookie. Allow the cookies to sit for 5 minutes and then use a toothpick to slowly swirl the hug around.
  6. Carefully remove the cookies to a baking rack to finish cooling completely before storing them.

Suggestions:

  • If you don’t have Baileys Irish Cream, you can replace with it any coffee-flavored liqueur or even use rum, bourbon, or whiskey in its place.
  • If you want these cookies to spread less, refrigerate the cookie dough for 1 hour before rolling it into cookie dough balls. If refrigerated, the cookie dough may be a little bit tough to roll. Just work it between the palms of your hands as you roll it into balls. The heat from your hands will help to shape it.
  • If you swirl the melted Hershey’s Kisses Hugs too much, you will lose the lovely swirl pattern you’re aiming for. A little swirl goes a long way.
  • Store the cookies in an airtight container between layers of wax or parchment paper.
  • This recipe should yield approximately 36 cookies. The number of cookies may vary depending on how big you roll your cookie dough balls.

  • Replace the Hershey’s Kisses Hugs with your favorite variety of Hershey’s Kisses.
  • After swirling the Hershey’s Kiss on the top of each cookie, add a few finely sliced almonds for extra crunch.
