It’s kind of difficult to even start thinking about Christmas cookies when I’m still up to my elbows in skeletons in the midst of taking down Halloween. However, if there’s one quick and easy way to get one’s self into the holiday spirit quickly, it’s definitely gotta be by baking Christmas cookies. For me, once I crank on the oven and drag out every mixing bowl and measuring spoon I possibly own, things definitely start to feel a whole lot more festive. And, I’m sure it doesn’t hurt matters that I also tend to break out the egg nog spiked with rum while screaming at Alexa to play my favorite holiday tunes, trying my tipsy best to bake without totally bombing my kitchen with flour, sugar, and sprinkles. Perhaps it’s a good thing that Christmas only comes once a year. I don’t think my poor historic heart pine wood kitchen floors could handle it more than that.

Ingredients:

  • 1/2 Cup Unsalted Butter, Softened
  • 1/2 Cup Granulated Sugar
  • 1/2 Cup Light Brown Sugar, Packed
  • 1/2 Cup Creamy Peanut Butter
  • 1 Egg
  • 1 Tablespoon Vanilla
  • 3/4 Cup All-Purpose Flour
  • 3/4 Teaspoon Baking Soda
  • 1/4 Teaspoon Ground Sea Salt
  • 3/4 Cup of Grape Nuts
  • 1/2 Cup Old-Fashioned Oats

Directions:

  1. In a large mixing bowl, cream the butter and sugars together for 2 minutes on medium speed.
  2. Add the peanut butter; mix for 1 minute on medium speed.
  3. Add the egg and vanilla; mix for 1 minute on medium speed.
  4. In a small bowl, whisk together the flour, baking soda, and sea salt.
  5. Add the flour mixture to the mixing bowl; mix at low speed until just incorporated.
  6. Fold the Grape Nuts and old-fashioned oats into the cookie dough.
  7. Preheat oven to 350 degrees.
  8. When the oven has come to temperature, use a cookie scoop or tablespoon to measure out cookies onto a Silpat or parchment paper-lined baking sheet.
  9. Bake for 10 minutes.
