After 10 years of blogging and over 150 cookie recipes, it’s pretty hard to believe that I have only shared one other slice-and-bake cookie recipe and that was for Polish Christmas Cookies in 2014. How is it even possible for me not to have made another slice-and-bake cookie since then? I mean, I know that I’m a thumbprint cookie addict but that’s no excuse to give slice-and-bake cookies the cold shoulder now is it? Especially after realizing how delicious and easy they can be. So, you know what? As is often the case when I realize that I’ve neglected to give a certain ingredient or type of food adequate recognition, like this year’s “Summer of Zucchini” or this fall’s “Big Daddy Butternut Squash,” I will most likely go overboard and bake 3 to 6 new slice-and-bake cookie recipes in the next few months. Because, yes, I’m that type of person. If I’m going to do something, then chances are that I’m going to overdo it. So, I hope that you’re an ardent fan of slice-and-bake cookies because you’re about to see a whole lot of them in the next month or two. Let’s just hope that they turn out to be as amazing as this Irish butter version.

Ingredients:

  • 1/2 Cup Salted Irish Butter, Softened
  • 1/2 Cup Powdered Sugar
  • 1 Egg
  • 1 Teaspoon Vanilla
  • 1 Cup + 2 Tablespoons All-Purpose Flour
  • 1/4 Cup White Sparkling Sugar

Directions:

  1. Cream the butter on medium speed for 1 minute in a large mixing bowl.
  2. Sift the powdered sugar into the butter and then mix on low speed until incorporated. Increase speed to medium and mix for 1 additional minute.
  3. Add the egg and vanilla; mix for 2 minutes on medium speed.
  4. Add the flour and mix on low speed until just incorporated.
  5. Use a silicone spatula to bring the dough together, tightly wrap the dough in plastic wrap, and then refrigerate for 30 minutes.
  6. Divide the dough in half. Use your hands to form each half of the dough into a round log. Tightly wrap each round log in plastic wrap and then roll each one till it is somewhat round and approximately 4 inches long. Freeze for 45 minutes.
  7. Spread the sugar out on a dinner plate. Unwrap each half of the dough and roll it in the sugar until it is completely coated.
  8. Slice the dough into 1/4-inch slices. Place the slices on a Silpat or parchment paper-lined baking sheet.
  9. Bake for 15 to 18 minutes. Allow the cookies to cool for 5 minutes before removing them to a baking rack to finish cooling completely.

Suggestions:

  • I used Wilton White Sparkling Sugar for these cookies. It’s coarse and sparkly. If you don’t have sparkling sugar, you can replace it with granulated sugar.
  • Bake the cookies until their centers are set. Every oven bakes at a slightly varying temperature, so make sure to check on your cookies every minute or two after they have been baking for 10 minutes. How thick or thin your cookie slices are could determine whether or not they need to be baked for a longer or shorter amount of time.
  • This recipe will yield 16 to 20 cookies, depending on how thick or thin you roll out the dough and how thick or thin your cookie slices are.

  • Replace the sparkling sugar with festive-colored nonpareils.
  • Add lemon or orange zest to the cookie dough.
