Cake mix cookies are a delicious way to enjoy a sweet treat without having to spend a lot of time in the kitchen. These red velvet cake mix cookies are soft, cakey, and absolutely delicious. Plus, the addition of chopped white chocolate to the cookie dough gives these vibrant red velvet cookies a festive red-and-white color combination that’s perfect for the holidays.
When it comes to cake mix cookie recipes, I’m one of those people who gets all fired up, flustered, and happier than an overworked, exhausted, and achingly miserable elf the day after Christmas, when all of the hullabaloo finally comes to an end. Sometimes we all just need a break, right? Yeah, yeah, yeah, I know that I have a pantry full of flour, sugar, baking soda, baking powder, and salt, however, sometimes it’s just easier to grab a store-bought box of cake mix and let it do most of the work, especially during the busy holidays. If you’re mixing dough and baking cookies, using a boxed cake mix doesn’t make cookies any less homemade. P.S. Cake Mix Cookie Recipes
Oatmeal Spice Cake Mix Cookies with Blueberries
Cornmeal Coconut Cake Mix Butter Cookies

Cake Mix Cinnamon Oatmeal Reindeer Cookies
French Vanilla Cake Mix Rainbow Cookies
Ingredients:
- 1/2 Cup Unsalted Butter, Softened
- 2 Eggs
- 1 Teaspoon Vanilla
- Pinch of Kosher Salt
- 1 (15.25-oz.) Red Velvet Cake Mix
- 1/4 Cup All-Purpose Flour
- 1 (4.4-oz.) White Chocolate Bar, Finely Chopped
Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, mix the butter, eggs, vanilla, and salt on medium speed for 2 minutes.
- Add the cake mix and flour. Use a silicone spatula to mix until just incorporated.
- Fold the chopped white chocolate into the cookie dough.
- Use a cookie scoop to scoop the dough out onto a Silpat or parchment paper-lined baking sheet.
- Bake the cookies for 9 to 10 minutes.
- Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.
Suggestions:
- I used a Lindt Classic Recipe White Chocolate Bar for this recipe.
- You can swap in white chocolate chips if you choose.
- Be careful with this cookie dough. It will stain because of the red food coloring. I suggest wearing an apron or dark clothing.
- This recipe will yield approximately 2 dozen cookies.
Improvements:
- For an extra dose of chocolate, fold a milk chocolate or dark chocolate bar into the cookie dough.
- Fold sliced almonds into the cookie dough.
- Sprinkle a little bit of white sparkling sugar on the top of each cookie before baking.
