If you’ve ever found yourself torn between the deep, molasses-rich flavor of a soft and chewy spice cookie and the chocolate-and-cream perfection of an OREO cookie, then prepare to have your mind blown. This cookie mashup brings the two legendary cookies together to create one spectacular recipe. These OREO Cookies & Cream Molasses Spice Cookies are packed with warm notes of ginger, cinnamon, nutmeg, and cloves, but with a rebellious, delightful twist. A generous helping of crushed OREO cookie pieces adds a lovely crunch you’re bound to fall head over heels for at first bite. This is, without a doubt, a match made in cookie heaven.
Over the years, I’ve discovered that sometimes a store-bought cookie can be your best friend. They’re great for crumbling into homemade ice cream to add texture, making a crunchy, flavorful pie crust or ice-box dessert layer, or even folding into homemade cookie dough to make things more exciting. These Golden Sandwich Cookie Chocolate Chip Cookies, these Peanut Butter Cookies with Crushed Oreos, and these Peppermint Cream Cheese Crushed Oreo Cookies are all proof that adding a handful of crushed OREO Chocolate Sandwich Cookies or Golden OREO Sandwich Cookies to a bowl full of homemade cookie dough can never be a bad thing. That being said, apparently, B.O.B. Bob and his entire work crew would disagree where these OREO-studded Soft & Chewy Molasses Spice Cookies are concerned. They were absolutely convinced that when reaching for one of these lil’ cookies, they were going to bite into them and discover chocolate chips, and let’s just say, when they didn’t find any, there was a minor office uprising. So, if you want to avoid a mutiny at your own house or your significant other’s workplace, maybe just go ahead and toss in a handful or two of chocolate chips. Either way, this is still one dang good cookie. But yeah, I see their point. Chocolate chips make pretty much everything better.

Ingredients:
Cookie Dough:
- 1/2 Cup Unsalted Butter, Softened
- 3/4 Cup Granulated Sugar
- 1 Egg
- 1 Teaspoon Vanilla
- 1/4 Cup Molasses
- 2 Cups All-Purpose Flour
- 2 Teaspoons Baking Soda
- 1 1/2 Teaspoons Ground Ginger
- 1/2 Teaspoon Kosher Salt
- 1/2 Teaspoon Ground Cinnamon
- Pinch of Ground Cloves
- Pinch of Freshly Grated Nutmeg
Cookie Add-Ins & Add-Ons:
- 20 OREO Chocolate Sandwich Cookies (Divided)

Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream the butter and sugar together on medium speed for 2 minutes.
- Add the egg, vanilla, and molasses; mix for 1 minute on medium speed.
- In a small bowl, whisk together the flour, baking soda, ginger, salt, cinnamon, cloves, and nutmeg. Add a third of the dry ingredients to the wet ingredients and mix on low until just incorporated. Repeat until all of the dry ingredients are just incorporated into the dough. Do not overmix.
- Using your hands, crush 16 OREO cookies into the cookie dough, then gently stir to combine.
- Use a cookie scoop to scoop the dough out onto a Silpat or parchment paper-lined baking sheet.
- Using your hands, crush the remaining 4 OREO cookies, then gently press a few pieces into each cookie.
- Bake for 10 minutes.
- Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.

Suggestions:
- When mixing the cookie dough, make sure to scrape down the bowl as needed to make sure that all of the ingredients are thoroughly incorporated.
- If you don’t want to use your hands to crush the OREO cookies, place them in a large resealable plastic bag and use a meat mallet or rolling pin to crush them.
- After you remove the cookies from the oven, gently use your fingers to press little indentations down into the top of each cookie. Gently pressing indentations into the tops of the cookies after you remove them from the oven helps to give them a bumpy and more desirable appearance. If you find that the cookies are burning your finger tips, you can always use the back of a spoon to press the indentations into the cookies.
- Store the baked cookies in an airtight container between layers of wax paper.

Improvements:
- If you aren’t a fan of ground cloves or nutmeg, feel free to make these a ground ginger and/or a ground cinnamon cookie only. Simply omit the ground cloves and freshly grated nutmeg.
- Add chocolate chips to the cookie dough.
- Replace the traditional OREO Chocolate Sandwich Cookies in this recipe with OREO Golden Sandwich Cookies, or any other variety of OREO Sandwich Cookies you think might work well in these molasses spice cookies.
- For a more colorful cookie, add a 1/4 cup of Milk Chocolate M&M’s to the cookie dough.
