Zero crystal ball needed here to predict that I would be putting that flavorful, sweet, and spicy sauce to work in at least two or three recipes. Well, here you have it. The first recipe. And, of course, it just had to be a recipe for deviled eggs. Because, yes, even after over 50 Deviled Egg Recipes, I’m nowhere near giving in the towel. Now it might take us a wee bit to get to “Deviled Egg Number 100,” but you dang sure know that we’re up for the challenge. Brown Sugar Caribbean Jerk Seasoning:

  • 1 Tablespoon Light Brown Sugar, Packed
  • 1 Tablespoon Onion Powder
  • 1 Tablespoon Garlic Powder

  • 2 Teaspoons Finely Ground Black Pepper
  • 2 Teaspoons Dried Thyme
  • 2 Teaspoons Dried Parsley
  • 2 Teaspoons Ground Cayenne
  • 1 Teaspoon Paprika
  • 1 Teaspoon Ground Allspice
  • 1/2 Teaspoon Crushed Red Pepper Flakes
  • 1/2 Teaspoon Ground Cinnamon
  • 1/2 Teaspoon Freshly Grated Nutmeg
  • 1/2 Teaspoon Ground Cloves
  • 1/2 Teaspoon Ground Cumin

Jerk Seasoned Caribbean Honey Mustard Sauce:

  • 1 Cup Mayonnaise
  • 2 Tablespoons Honey
  • 1 Tablespoon + 1 Teaspoon Spicy Brown Mustard
  • 2 to 3 Teaspoons Jerk Seasoning (See Suggestions)
  • 2 Tablespoons Fresh Cilantro, Very Finely Chopped

Deviled Eggs:

  • 6 Large Hard-Boiled Eggs
  • 4 to 5 Tablespoons Jerk Seasoned Caribbean Honey Mustard Sauce
  • Brown Sugar Caribbean Jerk Seasoning
  • 1 to 2 Tablespoons Fresh Cilantro, Very Finely Chopped

Directions:

Brown Sugar Caribbean Jerk Seasoning:

  1. Place all of the ingredients into a bowl and mix well to combine.
  2. Pour or spoon the seasoning mix into a clean dry airtight glass spice jar.
  3. Shake well before use.

Jerk Seasoned Caribbean Honey Mustard Sauce:

  1. Place all of the ingredients into a glass bowl. Use a small whisk to whisk all of the ingredients together until smooth.
  2. Store in an airtight glass container or cover tightly with plastic wrap. Refrigerate until use.

Deviled Eggs:

  1. Halve the hard-boiled eggs lengthwise, placing the yolks into a medium-sized bowl.
  2. Mash the egg yolks with the tines of a fork.
  3. Add 4 tablespoons of the honey mustard sauce to the bowl. Stir well to combine.
  4. If needed, add an additional 1 tablespoon of honey mustard sauce to the bowl to achieve the perfect deviled egg consistency. Stir well to combine.
  5. Spoon the filling into each egg well, or fill a resealable bag with the filling, snip off the end, and then pipe the mixture into the well of each egg.
  6. Garnish each deviled egg with a little bit of jerk seasoning and a sprinkle of cilantro.

  • I used large eggs for this deviled egg recipe. If you are using smaller or larger eggs, you may need to adjust the amount of honey mustard sauce used in this recipe to prevent the filling from turning runny or becoming too thick.
  • If your filling does become too runny, try adding extra hard-boiled egg yolks. It’s never a bad idea to boil a few extra eggs when you’re making deviled eggs. If you mess up one or two eggs while peeling them, you’ll have a couple to use as replacements. And, if your filling is too runny, you can use the extra yolks to solve that dilemma.
