Fresh pineapple always makes me think of my Dad, and how much he completely adored it when I was a child. Unfortunately, I never got around to asking him whether his love of pineapple stemmed from his years stationed in Hawaii while in the Navy, or whether he just found it to be a fruit he simply couldn’t resist. Whatever the case, I can still recall him and my Mom bringing several home with them when they visited Hawaii years later, without my brother and me. And that’s when I learned that the pineapple you buy at the market or grocery store has absolutely nothing on fresh pineapple straight off the plane from Hawaii. World rocked, y’all; world rocked. Up until that moment, I simply had zero clue. So yeah, many years later, when B.O.B. Bob and I finally got to visit Hawaii for ourselves, you better believe a few of those perfectly ripe pineapples made their way back to Virginia with us. And, no shame here, they were shared with absolutely no one. That’s right. We stingily kept those gorgeous beauties all to ourselves, imagining for just a few more days that we were back on the island. Now, is the Caribbean anything like Hawaii? No. But by gosh, they’ve still got fresh pineapple. And in my world, that’s close enough.

Ingredients:
- 2 Cups Fresh Pineapple, Diced Small
- 1/3 Cup Sweet Yellow Onion, Grated
- 2 Tablespoons Fresh Cilantro, Very Finely Diced
- 1 Tablespoon Apple Cider Vinegar
- 1/2 Teaspoon Jerk Seasoning (See Suggestions)
- Pinch of Finely Ground Sea Salt

Directions:
- Place all of the ingredients into a glass or non-reactive metal bowl. Gently stir to combine.
- Serve with tortilla or corn chips or as a topping or garnish for chicken, pork, or seafood.

Suggestions:
- Half of a small to medium-sized onion will yield 1/3 cup of grated onion.
- To make this recipe, I used homemade Brown Sugar Caribbean Jerk Seasoning. Crafted with the perfect blend of spices and the subtle sweetness of brown sugar, this homemade jerk seasoning is a lovely way to add a slightly sweet flavorful Caribbean spice profile to your everyday recipes. If you use a store-bought jerk seasoning, the store-bought version will most assuredly contain more salt. You may want to taste the salsa before adding a pinch of finely ground sea salt.
- Not a fan of cilantro? No worries, use finely chopped fresh parsley instead.

Improvements:
- Add finely chopped red bell pepper, a few tablespoons of drained pimento, or very finely diced jalapeño to the salsa.
- If your pineapple isn’t super-sweet, stir in a drizzle of honey or a sprinkle of brown sugar to sweeten the salsa.
- Add peeled, diced fresh peaches to this salsa if you are making it in the summer, when they are readily available.
- Serve this salsa alongside this Sheet Pan Chipotle Lime Shrimp Bake or these Tortilla Crusted Baked Marinated Pork Chops.
