This autumn spiced apple bundt cake uses a spice cake mix as its base, for those of you who are looking to save time yet still bake a delicious cake. With its sweet crunchy oatmeal topping and moist apple-filled cake texture, this delightful cake is sure to become a huge hit, whether you serve it for breakfast, brunch, or dessert.
It’s always fun to receive a product to test out, especially when it’s a product you particularly like. Sadly, that’s not always the case, which is why I’m learning to say no to sponsors that I just don’t feel are a good fit for my recipes. For today’s recipe though, I received a box of Irish Rolled Oats from Flahavan’s, which is honestly a product I would have no problem buying all year long. Although I’ll have to admit, it wasn’t necessarily the oatmeal I was most excited about in this sponsored shipment. I was more fascinated with the free Head Gasket they included along with the oatmeal.
So, what exactly is a Head Gasket you ask? Well, it’s a bit of a story, so grab a seat and get comfortable. Many, many years ago, when I was just a young thing in high school, I had a group of friends affectionately referred to as “The Herd.” We pretty much did everything together. If I’m being dead honest, probably too much. We might have been better off if we had spent some time developing other friendships outside of “The Herd” and working on our own individual life goals. Instead, we spent lots of time hanging out, getting nothing done, and pretty much not accomplishing much. Basically, just having a good time and trying not to get arrested while doing it.
Anyway, back to the story. One member of “The Herd” in particular, named Dean, was a talented artist with the most gorgeous, long, flowing, wavy red hair imaginable. Y’all, I’m talking about some of the most beautiful hair in the world. He basically had the hair every girl spends their life dreaming of. Seems like it always works out that way in life, doesn’t it? When it comes to hair, we are never blessed with what we find the most desirable. So anyway, to keep his hair under wraps and away from his face, my friend came up with his own unique hair accessory which became known to all as the Head Gasket.
This particular Head Gasket was made by taking an old pair of yellow sweatpants, with white stripes down the sides, and cutting out a length that could be placed down over the head and then lifted back to keep the hair off of the face. Quite honestly, this Head Gasket was the most hideous hair accessory on the face of the planet. And, since it was against the rules to wash this particular hair accessory, it also became one of the most disgusting things on the face of the planet. It was stained, hideous, a bit on the smelly side, and completely covered with various substances that one doesn’t even want to begin to imagine.
After years of wear and tear, not to mention a major haircut, the Head Gasket was eventually retired, however, it still fondly remains in the memory of every single member of “The Herd.” So much so, that when I received my free Head Gasket along with the oatmeal for this post, the first thing I did was text my friend and tell him all about it. Mind you, this was after I finished laughing my head off. Never in my life would I have imagined that the Head Gasket would become a fashion item anyone in this world other than Dean would possibly find desirable.
And, while the pictures above, with me showing off the versatility of the Head Gasket might not seem too bad, please know that there were many other photos taken that were not nearly as flattering. It’s safe to say that I did not include those for obvious reasons. Some looks just aren’t meant to be shared or seen in the light of day. So, if you happen upon me in my kitchen, sporting this new trendy hair accessory, please do me a favor; try not to laugh. After all, it is a pretty great way to keep the hair out of your face when cooking and baking. P.S. I’ll be washing my Head Gasket occasionally, so while it may be the most hideous hair accessory on the face of the planet, it definitely won’t be the most disgusting.
Ingredients:
Oatmeal Topping:
- 1 Tablespoon Unsalted Butter, Room Temperature
- 3 Tablespoons Unsalted Butter, Melted
- 1/2 Cup Quick Cooking Oatmeal
- 1/4 Cup Light Brown Sugar, Packed
- 1/2 Teaspoon Ground Cinnamon
Cake Batter:
- 1 (15.25-oz.) Box Spice Cake Mix
- 1/2 Cup Quick Cooking Oatmeal
- 3 Eggs
- 1 Cup Whole Milk
- 1/2 Cup Canola Oil
- 1 Teaspoon Vanilla
- 2 Granny Smith Apples, Peeled, Cored, & Chopped
Directions:
Oatmeal Topping:
- Preheat oven to 350 degrees.
- Liberally grease a large bundt pan with the 1-tablespoon room temperature butter; set aside.
- In a small bowl, stir together the melted butter, oatmeal, brown sugar, and cinnamon until well combined.
- Spread the mixture out evenly in the bottom of the bundt pan.
Cake Batter:
- Mix the cake mix, oatmeal, eggs, milk, oil, and vanilla in a large bowl on medium speed for two minutes.
- Fold the chopped apples into the batter.
- Pour the batter into the bundt pan and spread it out evenly with a spatula.
- Bake for 40 to 50 minutes, or until a knife inserted into the middle of the cake comes out clean.
- Allow the cake to cool for 15 minutes before turning it out onto a serving plate.
Suggestions:
- Granny Smith apples are great to use in this recipe because they don’t turn to complete mush when baked.
- Every oven cooks at a different temperature. Check on the cake every 5 minutes, after it has been baking for 40 minutes, to ensure that you do not overbake it.
- The cake will begin to pull away from the side of the pan when it is done.
Improvements:
- Serve this bundt cake warm with a scoop of Buttermilk Double Vanilla Ice Cream.
- Add chopped pecans or walnuts to the cake topping or cake batter.
