Lately, I’ve been thinking that I need to add a cookie tab to my site menu because I seem to make so many different varieties of them. Probably because cookies are the most delicious, not to mention, convenient dessert to make. They’re portable, versatile, time-friendly, and always looked forward to. I mean, honestly, who doesn’t have time for a cookie before bed, for breakfast, as a lunchbox treat, or just as a pre-dinner snack? Yup, cookies are pretty much perfection. Especially these. They’re sweet, chewy, and absolutely brimming with appley goodness.

Chewy Brown Sugar Apple Chip Cookies - These extra-large apple-flavored cookies are the perfect blend of sweetness and chewiness, thanks to the brown sugar and finely crushed apple chips which they contain. The only problem with these sweet chewy cookies is that they are almost too good to resist.

Ingredients:

  • 12 Tablespoons Unsalted Butter, Room Temperature
  • 1 Cup Brown Sugar, Packed
  • 1 Egg
  • 1 Tablespoon Vanilla
  • 2 Cups All-Purpose Flour
  • 1 Tablespoon Corn Starch
  • 1 Teaspoon Baking Soda
  • 1/2 Teaspoon Kosher Salt
  • 1 Cup Apple Chips, Finely Crushed

Chewy Brown Sugar Apple Chip Cookies - These extra-large apple-flavored cookies are the perfect blend of sweetness and chewiness, thanks to the brown sugar and finely crushed apple chips which they contain. The only problem with these sweet chewy cookies is that they are almost too good to resist.

Directions:

  1. In a large mixing bowl, cream the butter and sugar together on medium speed for 3 minutes.
  2. Add the egg; mix for 30 seconds.
  3. Add the vanilla; mix for 30 seconds.
  4. Whisk the flour, corn starch, baking soda, and salt together in a medium bowl.
  5. Add the flour mixture to the mixing bowl; mix on low speed until just combined.
  6. Fold the finely crushed apple chips into the cookie batter.
  7. Tightly cover the bowl and refrigerate it for at least 2 hours.
  8. Use an ice cream scoop to measure out each cookie. Place each cookie onto a Silpat or parchment paper-lined baking sheet.
  9. Bake 16 to 20 minutes in a 350-degree preheated oven, or until the cookies are golden brown and starting to develop cracks on top.

Suggestions:

  • To crush the apple chips, place them in a large resealable plastic bag, seal tightly, and then use a rolling pin or your hands to crush them. Measure the apple chips after they have been crushed, not before.
  • I suggest baking these cookies in two separate batches to prevent over-crowding.
  • This recipe will yield approximately 16 extra-large cookies.
  • If you use a cookie scoop instead of an ice cream scoop, you can get a lot more cookies out of this recipe, however, they will take considerably less time to bake. Approximately 8 to 10 minutes, instead of 16 to 20.
