First Monday Favorites – October 2019

Soda-Glazed Crescent Roll Apple Dumplings - Apple dumplings are by far, one of the best fall desserts, however, they can be a little time-consuming to make. By using crescent rolls for the crust and brown soda or root beer to help make the sauce, you can save time and still have an amazing, apple-filled treat for dessert. Simply put, these sweet crescent roll apple dumplings are dangerously delicious.

Wow. Yeah, wow. That’s about all I can say about last month’s recipes. I mean, really, some months I just get lucky. First, there was this Pepper Jack Quiche with a Potato Crust, followed by these Crunchy Corn Flake Oven-Baked Chicken Tenders. And then, there were all of the amazing #AppleWeek recipes, including this Oatmeal Apple Spice Bundt Cake (Cake Mix), this Buttery Apple Cider Tea-Infused Ice Cream, these Crunchy Dried Cherry Applesauce Cake Bars, and these Chewy Brown Sugar Apple Chip Cookies.

There was also this 7-Ingredient Broken Spaghetti Pasta Soup as well. But you know what? Even though it was freaking amazing, it still wasn’t my favorite. I would say that it came close though, along with the above chicken tenders and tea-infused ice cream. But, since there can only be one favorite, I would have to give the award to these Soda-Glazed Crescent Roll Apple Dumplings, which I also shared for #AppleWeek. They were just so simple to throw together and they tasted so stinkin’ good. Definitely a new fall fave around here.

Soda-Glazed Crescent Roll Apple Dumplings

Soda-Glazed Crescent Roll Apple Dumplings

Ingredients:

  • 2 Apples
  • 1 (8-Count) Can Refrigerated Crescent Roll Dough
  • 1/2 Cup Unsalted Butter, Melted
  • 3/4 Cup Light Brown Sugar
  • 1 Teaspoon Vanilla Extract
  • 1/2 Teaspoon Ground Cinnamon
  • 1/4 Teaspoon Kosher Salt
  • 3/4 Cup Brown Soda or Root Beer

Directions:

  1. Preheat oven to 350 degrees.
  2. Peel and core the apples. Cut each apple into 8 equal slices.
  3. Open the crescent rolls and separate the triangles. Place 2 slices of apple on top of the wider end of each triangle of dough and then roll into a crescent. Place the rolled crescents into a 9×13 baking dish.
  4. In a small bowl, whisk together the butter, brown sugar, vanilla, cinnamon, and salt until there are no longer any lumps. Pour the mixture over the crescent rolls.
  5. Pour the soda between the crescent rolls, making sure to not pour it over the crescent rolls.
  6. Bake for 35 to 45 minutes, or until golden brown.
