This sweet and colorful dessert recipe is for when you need cookies in your life but don’t have a lot of time on hand to spend making them. By using a cake mix, you can quickly and deliciously make flavorful cookies using only six ingredients.
Y’all, welcome to yet another recipe redo. This “cheater” cookie recipe came about several years ago when I made Celebrate Good Times Vanilla Cake Mix Cookies for an online recipe challenge. The challenge was to make a recipe using six ingredients or less with a “Celebrations” theme. Nothing says “Let’s Celebrate!” more to me than way too many colorful M&M’s shoved inside of super-easy-to-make vanilla cake mix cookies. Unless, of course, the pictures of those cookies are so bad that they look more like bright colorful alien dog poo biscuits.
A redo of this recipe was definitely in order because I think it’s important to have a few “cheater” recipes handy for those times when life gets busy. Now, here’s the thing folks, cookies aren’t that hard to make in the first place, and they don’t actually require a crazy amount of ingredients. However, there are times when it’s nice to cheat and use a cake mix just to make life a little bit easier. Way less measuring, way more cookie eating. It’s hard to find the harm in that, right?
But wait, it gets better. Don’t feel like you have to use M&M’s Minis in this recipe. Throw in whatever you might happen to have squirreled away in your pantry. Chocolate chips, nuts, dried fruit, leftover Halloween candy, sprinkles; it really doesn’t matter. Make these cookies your own. Heck, you can even try experimenting with different flavors of cake mix to make things really interesting. The point is, that cake mix cookies are fast, convenient, and an oh-so-yummy way to make cookies an everyday thing. Now, that’s worth celebrating.
Ingredients:
- 2 Eggs
- 1/4 Teaspoon Instant Espresso Coffee
- 1 Tablespoon Vanilla
- 1 (15.25-oz.) Box French Vanilla Cake Mix
- 1/2 Cup Melted Unsalted Butter
- 1 (12-oz.) Bag Milk Chocolate M&M’s Minis
Directions:
- Preheat oven to 350 degrees.
- Mix eggs, instant espresso, and vanilla on low speed for 30 seconds.
- Add cake mix, then melted butter; mix on low speed just until everything is incorporated.
- Stir the M&M’s into the dough with a spatula.
- Allow cookie dough to rest for 5 minutes.
- Using a cookie scoop or tablespoon, drop dough onto a Silpat or parchment paper-lined cookie sheet.
- Bake for 9 to 10 minutes, or until the tops just start to turn golden brown.
- Remove cookies from oven and let rest for 3 minutes.
- Move cookies to a baking rack to finish cooling completely.
Suggestions:
- The instant espresso coffee in this recipe helps to give these cookies added flavor, if you don’t have any on hand, feel free to leave it out.
- The dough will become thicker, and easier to scoop after you allow it to rest for 5 minutes.
- There are a lot of M&M’s in these cookies. Feel free to use less if you choose.
- Store the cookies in an airtight container after they have completely cooled.
Improvements:
- Use a chocolate cake mix.
- Use your favorite variety of M&M’s in this recipe.
- Replace the M&M’s in this recipe with finely chopped chocolate, miniature chocolate chips, or chopped nuts.
