Celebrate Good Times Vanilla Cake Mix Cookies | Faith, Hope, Love, and Luck Survive Despite a Whiskered Accomplice

One more week till St. Patrick’s Day; let the celebration begin! These cookies are my recipe entry for the third week of the SOLO Simple But Good Recipe Contest, under the theme “Celebrations.” Once again, I’ve managed to come up with a recipe using only six ingredients, not such an easy thing to do when you’re making a cookie. Using a cake mix helped out a lot, and gave the cookies a completely different texture than most of the cookies I make. These cookies are crazy fast and simple to whip up, I think I spent more time waiting for the oven to preheat than anything. Please take a moment and VOTE HERE for my recipe entry.

Ingredients:

Celebrate Good Times Vanilla Cake Mix Cookies | Faith, Hope, Love, and Luck Survive Despite a Whiskered Accomplice

Directions:

  1. Preheat oven to 350 degrees.
  2. Mix eggs, instant espresso, and vanilla on low speed for 30 seconds.
  3. Add cake mix, then melted butter; mix on low speed just until everything is incorporated.
  4. Stir M&M’s into the dough with a spatula.
  5. Allow cookie dough to rest for 5 minutes.
  6. Using a cookie scoop or tablespoon, drop dough onto a Silpat or parchment paper lined cookie sheet.
  7. Bake for 9 to 10 minutes, or until the tops just start to turn golden brown.
  8. Remove cookies from oven and let rest on the cookie sheet for 3 minutes.
  9. Move cookies to a cooling rack to finish cooling completely.
  10. Store in an airtight container.

Suggestions:

  • The dough will become thicker, and easier to scoop, after you allow it to rest for 5 minutes.

  • 1 Tablespoon Vanilla
  • 1 (15.25-oz.) Box French Vanilla Cake Mix
  • 1/2 Cup Melted Unsalted Butter
  • 1 (12-oz.) Bag Milk Chocolate M&M's Minis

Directions:

  1. Preheat oven to 350 degrees.
