When it comes to comfort food, some people choose to eat a big ol’ burger with fries, others a piping hot bowl of soup, and still others a plate heaped high with turkey, stuffing, and all of the trimmings. Not me. When it comes to comfort food, I want deviled eggs. Nothing else will do. Unless of course, there’s a BLT to go along with the deviled eggs. That for me would have to be the ultimate comfort food meal.
Now, here’s the thing. I’m always trying to come up with new and inventive ways to make deviled eggs, as you can see from ALL THE DEVILED EGGS I’ve made in the past, however, I don’t always have a lot of ingredients on hand. This recipe is a way to make deviled eggs “egg”tra-special even when I don’t have a lot of ingredients hanging out in my fridge or pantry.
So, sit back and relax, pop on a favorite romantic comedy, and get ready to eat some deviled eggs y’all. Today is all about comfort food. We’ll just ignore the fact that we haven’t really done anything to deserve it. After all, it’s cold as heck outside, and I think that’s reason enough to partake in a little comfort, don’t you?
Ingredients:
- 6 Hard-Boiled Eggs
- 4 Tablespoons Mayonnaise
- 3 Teaspoons Dill Pickle Juice
- 1 Teaspoon Dijon Mustard
- 1 Teaspoon Dried Dill Weed (Additional for Garnish)
- 1/2 Teaspoon Granulated Sugar
- 1/4 Teaspoon Kosher Salt
- 1/4 Teaspoon Finely Ground Black Pepper
Directions:
- Peel each egg, and then cut each one in half lengthwise.
- Place the egg yolks into a medium-size bowl and use a fork to finely mash them together.
- Add the remaining ingredients to the mashed yolks and then stir everything together until smooth.
- Fill the well of each egg half with the yolk filling and then sprinkle each egg half with additional dill weed to garnish.
Suggestions:
- Use extra-large eggs for this recipe.
- You can either use a spoon to fill each egg or place the filling into a small plastic bag, snip the tip off of the bag, and then pipe the filling into the well of each egg half.
- See my favorite tips on How to Hard-Boil Eggs.
Improvements:
- Replace the dried dill weed with fresh dill weed.
- Use an open star piping tip to fill the well of each egg. When it comes to decorating, this Wilton Decorating Starter Set is a great thing for the average cook or baker to have on hand.
- Serve topped with crispy crumbled bacon or serve alongside Dilly Brown Sugar Bacon BLT’s.
