Santa’s not the only one who enjoys a few cookies at Christmas time, his reindeer look forward to them as well. These oatmeal and cinnamon-flavored cookies, made using a yellow butter cake mix, are the perfect cookie recipe to make with your children during the holiday season. Not only will your kids love eating these tasty cookies, but they’ll also be thrilled to leave a few out for Santa’s reindeer.
Santa’s kind of a jerk. Yeah, you read that right. The big man in red shows up every year and eats up all of the cookies left out on Christmas Eve, not once even giving a second thought to the sweet lil’ reindeer hauling his fat butt around through the sky all night long. Poor lil’ Dasher, Dancer, Prancer, Vixen, Comet, Cupid, Donner, & Blitzen. Those reindeer sure as hell deserve a few cookies for all of their hard work. Heck, even Rudolph deserves a cookie or two for being a glorified flashlight all night, don’t you think? So, this year, make sure to put a few of these cinnamon and oatmeal cake mix cookies out for Santa’s reindeer. And make sure to leave a note for Santa, telling him to keep his chubby little hands off.
Ingredients:
Cookies:
- 1 (15.25-oz.) Box Yellow Butter Cake Mix
- 1 Teaspoon Ground Cinnamon
- 1/2 Cup Unsalted Butter, Melted
- 2 Eggs, Lightly Beaten
- 1 Teaspoon Vanilla
- 2 Cups Quick-Cooking Oats
Rolling Sugar:
- 1/4 Cup Granulated Sugar
- 1/2 Teaspoon Ground Cinnamon
Directions:
Cookies:
- Preheat oven to 350 degrees.
- In a large bowl, whisk together the cake mix and cinnamon.
- Add the melted butter, lightly beaten eggs, and vanilla; stir well to combine.
- Add the oats; stir well to combine.
Rolling Sugar:
- In a small bowl, mix the granulated sugar and cinnamon together.
- Use a cookie scoop or tablespoon to scoop out the dough, and then, using the palms of your hands, roll each scoop of dough into a ball. Roll each ball into the sugar and cinnamon mixture and then place it onto a Silpat or parchment paper-lined baking sheet.
- Bake for 10 to 12 minutes, or until cooked through.
- Allow the cookies to cool on a baking rack before packaging them in an airtight container for storage.
Suggestions:
- These cookies will spread out slightly while baking. I suggest baking 12 cookies per baking sheet.
- When the cookies are finished baking, they will begin to crack on top. They will appear to be quite soft when you take them out of the oven, however, they will firm up after they cool.
- This recipe will yield approximately 2 1/2 dozen cookies.
Improvements:
- Add finely chopped pecans or walnuts to the cookie dough.
- Drizzle these cookies with a cinnamon glaze made using powdered sugar, water, and a touch of cinnamon.
- Use colored sanding sugar in lieu of granulated sugar.
