  • 1 (15.25-oz.) Box Yellow Butter Cake Mix
  • 1 Teaspoon Ground Cinnamon
  • 1/2 Cup Unsalted Butter, Melted
  • 2 Eggs, Lightly Beaten
  • 1 Teaspoon Vanilla
  • 2 Cups Quick-Cooking Oats

Rolling Sugar:

  • 1/4 Cup Granulated Sugar
  • 1/2 Teaspoon Ground Cinnamon

Directions:

Cookies:

  1. Preheat oven to 350 degrees.
  2. In a large bowl, whisk together the cake mix and cinnamon.
  3. Add the melted butter, lightly beaten eggs, and vanilla; stir well to combine.
  4. Add the oats; stir well to combine.

Rolling Sugar:

  1. In a small bowl, mix the granulated sugar and cinnamon together.
  2. Use a cookie scoop or tablespoon to scoop out the dough, and then, using the palms of your hands, roll each scoop of dough into a ball. Roll each ball into the sugar and cinnamon mixture and then place it onto a Silpat or parchment paper-lined baking sheet.
  3. Bake for 10 to 12 minutes, or until cooked through.
  4. Allow the cookies to cool on a baking rack before packaging them in an airtight container for storage.

  • This recipe will yield approximately 2 1/2 dozen cookies.
