Out of all this week’s Molasses Spice Cookies recipes, this lil’ number right here might just be my favorite. Granted, I am one of those people who doesn’t find raisins to be one of the most hideous ingredients ever to grace the earth. Especially when we’re talking about golden raisins. Growing up in Cumberland, Maryland, my Grandma Delawder’s raisin cookies were the stuff of legend in our family. And honestly, it wasn’t just about the act of eating the cookies themselves. It was about having her send you out onto the porch or balcony to grab a few of them, put them on a plate, and bring them back inside for everyone to enjoy. You see, my grandma would send us kids out onto the porch or balcony to fetch a few from her big old cookie tin, where she kept them stashed outside so they’d stay nice and cold. To my family, there was nothing better than an almost ice-cold raisin cookie, and I have yet to find another raisin cookie in this world that can even compare to the ones she made throughout my childhood. But honestly, y’all, these buttery oatmeal raisin cookies come pretty dang stinkin’ close. After quick-cooking oats and golden raisins are combined with melted butter in a skillet for a few minutes, they are folded into a Soft & Chewy Molasses Spice Cookies dough to create a buttery, raisin-studded heaven-on-earth. I imagine that these lil’ lovelies would have been grandma-approved, and that maybe she would have even made room for them in her family-famous outdoor cookie tin.

Directions:

  1. Melt the butter in a large skillet over medium heat. When the butter is melted, add the oatmeal, salt, and cinnamon. Stir constantly for 3 minutes.
  2. Transfer the oatmeal mixture to a large plate; set aside.
  3. Preheat oven to 350 degrees.
  4. In a large mixing bowl, cream the butter and sugar together on medium speed for 2 minutes.
  5. Add the egg, vanilla, and molasses; mix for 1 minute on medium speed.
  6. In a small bowl, whisk together the flour, baking soda, ginger, salt, cinnamon, cloves, and nutmeg. Add a third of the dry ingredients to the wet ingredients and mix on low until just incorporated. Repeat until all of the dry ingredients are just incorporated into the dough. Do not overmix. Gently fold the cooled buttery oatmeal mixture into the cookie dough.
  7. Use a cookie scoop to scoop the dough out onto a Silpat or parchment paper-lined baking sheet.
  8. Bake for 10 minutes.
  9. Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.

Suggestions:

  • When mixing the cookie dough, make sure to scrape down the bowl as needed to make sure that all of the ingredients are thoroughly incorporated.
  • You can use either golden raisins or traditional raisins for this recipe. I prefer golden raisins.
  • After you remove the cookies from the oven, gently use your fingers to press little indentations down into the top of each cookie. Gently pressing indentations into the tops of the cookies after you remove them from the oven helps to give them a bumpy and more desirable appearance.
  • This recipe will yield approximately 2 1/2 dozen cookies.
  • Store the baked cookies in an airtight container between layers of wax paper.

Improvements:

  • If you aren’t a fan of ground cloves or nutmeg, feel free to make these a ground ginger and/or a ground cinnamon cookie only. Simply omit the ground cloves and freshly grated nutmeg.
  • Sprinkle a little bit of fleur de sel or flaky sea salt over the cookies before baking them.
  • For an extra pop of ginger flavor, add finely chopped candied ginger to the cookie dough.
  • Replace the raisins with dried sweetened cranberries or cherries.
