
What happens when the coziest cookie of the season meets a timeless classic? You get pure, unadulterated magic. Imagine all the warm, chewy, spiced goodness you crave in a molasses spice cookie, but with a generous handful of semi-sweet chocolate chips tossed in for good measure.. Think of these Chocolate Chip Molasses Cookies as the more sophisticated, mysterious cousin to the everyday traditional chocolate chip cookie. They’re the perfect blend of cozy spice and rich chocolate. A grown-up, more sophisticated chocolate chip cookie that will win you over at first bite.
There’s something truly magical about chocolate chips. Seriously, whatever they touch seems to turn into edible gold. And when you toss them into Molasses Spice Cookies, it’s like you’ve packed rainbows, kittens, and unexpected snow days into one single lil’ cookie bite. Earlier this year, I sent a batch of these chocolate chip-studded beauties off to B.O.B. Bob’s work, along with a few plain, unadorned Soft & Chewy Molasses Spice Cookies. Needless to say, the chocolate chip ones were the true winners. So much so that I experimented again with the recipe around Halloween, creating a batch of M&M’s Minis Halloween Molasses Spice Cookies and a batch of Cookie Monster Molasses Spice Cookies. Those, too, disappeared rather quickly. So, if you’re ever wondering what to toss into your next batch of cookies, let it always be a magical bag of chocolate chips. I’ll leave it up to y’all whether or not to go with semi-sweet, dark, milk, or white chocolate. After all, when it comes to chocolate chips, you can pretty much do no wrong. P.S. Always measure with your heart. Chocolate chip measurements are always negotiable.

Ingredients:
Cookie Dough:
- 1/2 Cup Unsalted Butter, Softened
- 3/4 Cup Granulated Sugar
- 1 Egg
- 1 Teaspoon Vanilla
- 1/4 Cup Molasses
- 2 Cups All-Purpose Flour
- 2 Teaspoons Baking Soda
- 1 1/2 Teaspoons Ground Ginger
- 1/2 Teaspoon Kosher Salt
- 1/2 Teaspoon Ground Cinnamon
- Pinch of Ground Cloves
- Pinch of Freshly Grated Nutmeg
Cookie Add-Ins & Add-Ons:
- 8-oz. Frozen Semi-Sweet Chocolate Chips

Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream the butter and sugar together on medium speed for 2 minutes.
- Add the egg, vanilla, and molasses; mix for 1 minute on medium speed.
- In a small bowl, whisk together the flour, baking soda, ginger, salt, cinnamon, cloves, and nutmeg. Add a third of the dry ingredients to the wet ingredients and mix on low until just incorporated. Repeat until all of the dry ingredients are just incorporated into the dough. Do not overmix.
- Gently fold the chocolate chips into the cookie dough.
- Use a cookie scoop to scoop the dough out onto a Silpat or parchment paper-lined baking sheet.
- Bake for 10 minutes.
- Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.

Suggestions:
- When mixing the cookie dough, make sure to scrape down the bowl as needed to make sure that all of the ingredients are thoroughly incorporated.
- I suggest using frozen chocolate chips in this recipe. Adding the frozen chocolate chips to the cookie dough helps to chill down the dough and firm it up. This will help the cookies not to spread as they bake.
- 8-oz. of chocolate chips is 2/3 of a 12-oz. bag or approximately 1 heaping cup of chocolate chips.
- After you remove the cookies from the oven, gently use your fingers to press little indentations down into the top of each cookie. Gently pressing indentations into the tops of the cookies after you remove them from the oven helps to give them a bumpy and more desirable appearance.
- This recipe will yield approximately 28 cookies.
- Store the baked cookies in an airtight container between layers of wax paper.

Improvements:
- If you aren’t a fan of ground cloves or nutmeg, feel free to make these a ground ginger and/or a ground cinnamon cookie only. Simply omit the ground cloves and freshly grated nutmeg.
- Replace the semi-sweet chocolate chips with milk, dark, or white chocolate chips.
- Add chopped pecans or walnuts to the cookie dough.
- Fold roasted salted pepitas into the cookie dough for an added pop of texture and saltiness.
