Stop treating crispy fried onions like a holiday guest. Think beyond green bean casserole. With the perfect balance of smoky flavor, creamy filling, and a satisfying, salty crunch in every bite, these BBQ Deviled Eggs topped with fresh chives and crispy fried onions are about to become the star appetizer of your next gathering. Whether you’re hosting a game day or looking for the ultimate potluck dish, these bite-sized barbeque-flavored snacks are guaranteed to disappear in minutes.
Growing up, crispy fried onions appeared in our house for pretty much every family holiday. They weren’t an ingredient that was ever considered a splurge. Now, were they to be found in our pantry all year long? Hell, no. They were most certainly a holiday-only ingredient, especially considering the strict budget my Mom followed. However, you better believe our holiday table always, and I do mean always, had a Pyrex dish filled with crispy fried onion-topped green bean casserole on it. Even if it wasn’t the traditional green bean casserole that is often found on most holiday tables. You see, my Gammy was a huge fan of Campbell’s Golden Mushroom Soup. So, to us, that was all we ever knew. P.S., when it comes to green bean casserole, y’all, ditch the cream of mushroom. Golden mushroom is where it’s really at. Trust me on this. But also, folks, why do crispy fried onions have to be saved for just the holidays? Why can’t we use them in everyday recipes? Like these deviled eggs? Y’all…go get you some. Walk, run, skip, ride an e-bike; I don’t really give a flying fig. Just get you some. And then make these deviled eggs. You can thank me later.

Ingredients:
- 6 Large Hard-Boiled Eggs
- 2 Tablespoons BBQ Sauce (Additional for Garnish)
- 1/4 Teaspoon Finely Ground Black Pepper
- 1/4 Teaspoon Garlic Powder
- 1/4 Cup Mayonnaise (Approximately)
- 1 Tablespoon Fresh Chives, Finely Chopped (Divided)
- Crispy Fried Onions

Directions:
- Halve the hard-boiled eggs lengthwise, placing the yolks into a medium-sized bowl.
- Mash the egg yolks with the tines of a fork.
- Add the BBQ sauce, pepper, and garlic powder. Stir well to combine.
- Add half of the mayonnaise to the bowl. Stir well to combine. If needed, keep adding the remaining half of the mayonnaise, a little at a time, to achieve the perfect deviled egg consistency. Stir well to combine.
- Fold half of the chopped chives into the deviled egg filling. Reserve the other half for garnish.
- Spoon the filling into each egg well, or fill a resealable bag with the filling, snip off the end, and then pipe the mixture into the well of each egg.
- Garnish each deviled egg with a drizzle of BBQ Sauce and a sprinkle of chopped chives and crushed crispy fried onions.

Suggestions:
- CLICK HERE to see the best way to hard-boil eggs.
- I used large eggs for this deviled egg recipe. If you are using smaller or larger eggs, you may need to adjust the amount of mayonnaise used in this recipe to prevent the filling from turning runny or becoming too thick.
- For this recipe, I used Stubb’s Sweet Heat Legendary Bar-B-Q Sauce. You can use whichever brand or flavor of barbecue sauce you choose. Just remember that some barbecue sauces are thicker or thinner than others. The variety you use may result in you needing more or less mayonnaise for the deviled egg filling.
- If your filling does become too runny, try adding extra hard-boiled egg yolks. It’s never a bad idea to boil a few extra eggs when you’re making deviled eggs. If you mess up one or two eggs while peeling them, you’ll have a couple to use as replacements. And, if your filling is too runny, you can use the extra yolks to solve that dilemma.
- Use French’s Crispy Fried Onions for this recipe. Gently crush the crispy fried onions with your fingers over the filled deviled eggs to garnish them.
- If you aren’t serving these deviled eggs right away, don’t garnish them with the crushed crispy fried onions until just before you serve them. This will keep them crunchy and ensure that they don’t become soggy.

Improvements:
- Toast the crispy fried onions in a dry skillet over medium heat to bring out their flavor and give them a darker color. Make sure to stir them constantly and to pull them off of the heat before they burn.
- Add a teaspoon of mustard to the deviled egg filling.
- Fold a little bit of crumbled crispy bacon into the deviled egg filling.
