Not everyone has time around the holidays to bake homemade, completely from scratch Christmas cookies. That’s where using a boxed spice cake mix comes in handy. Simply add a few extra ingredients to create an easy, quick, and absolutely delicious “homemade” Christmas cookie with a serious cinnamon punch. No one will even guess that these cookies came from a boxed cake mix.

Every year, I reluctantly sign up to participate in this #ChristmasCookies Week event. I say reluctantly because I inevitably end up cussing up a storm during the weeks before the event. Ask anyone who lives near me; I guarantee that they’ve heard some choice words coming out of my kitchen. The cookies I plan on making either don’t turn out right or I practically destroy my kitchen in the process of making them. I also tend to procrastinate, which certainly doesn’t help matters. There’s nothing like waiting until the last minute, right?

So, this year, I decided I would just relax and do my best to create five new original Christmas cookie recipes that weren’t too overly complicated. First up, this delicious cinnamon cookie which uses a boxed spice cake mix. It doesn’t get much easier or less stressful than this recipe y’all. I literally made these while my dad was visiting and we were trying to decide what to eat for lunch. In less than half an hour we were eating cookies and still trying to figure out what to eat for lunch. When you’re eating cookies warm cookies right out of the oven, lunch can wait.

Ingredients:

• 1 (15.25-oz.) Box Spice Cake Mix
• 1/4 Cup Corn Starch
• 1/4 Teaspoon Kosher Salt
• 1/4 Cup Unsalted Butter, Melted & Cooled Slightly
• 1 Tablespoon Vanilla
• 1 Egg
• 1 (10-oz.) Bag Cinnamon Chips

Directions:

1. Preheat oven to 350 degrees.
2. In a large mixing bowl, whisk the cake mix, corn starch, and salt together until well combined.
3. In a small bowl, whisk together the melted butter, vanilla, and egg.
4. Add the wet ingredients to the dry ingredients and stir them together with a silicone spatula until just incorporated.
5. Fold the cinnamon chips into the cookie dough until they are evenly distributed.
6. Use a cookie scoop or tablespoon to measure dough out onto a Silpat or parchment paper-lined baking sheet.
7. Bake for 13 to 15 minutes, or until cooked through.
8. Allow the cookies to cool for three to five minutes before removing them to a baking rack to finish cooling completely.

Suggestions:

• Allow the butter to cool slightly before mixing it together with the vanilla and egg. This will help prevent the egg from curdling.
• You may decide not to use the entire bag of cinnamon chips in this recipe. Half of a bag is definitely adequate. It’s all up to you and how much you love cinnamon. I used Hershey’s Cinnamon Chips for this recipe and they definitely carry a serious cinnamon punch.
• These cookies don’t expand too much as they bake, so you can fit 12 of them on a baking sheet at a time.
• Store the cookies in an airtight container.
• This recipe will yield approximately 2 dozen cookies.

Improvements:

• Replace the cinnamon chips with chocolate chips.
• Add pecans, walnuts, or almonds to the cookie dough.
• Use a chocolate cake mix in lieu of a spice cake mix.
