First Monday Favorites – August 2019

Saucy Honey & Balsamic Blueberry Jam - There's nothing quite like homemade jam, although sometimes it can be just a little too sweet, as well as a little too thick in texture. This saucy jam uses honey and balsamic vinegar to give it just the right amount of sweetness and is cooked for a shorter amount of time, resulting in a saucelike consistency. It's perfect for spooning over desserts, like ice cream or cake, or even onto warm breakfast toast, biscuits, or muffins.

Last month, was a pretty busy month around here. Unlike the month before, we actually shared a decent number of recipes. Nine to be exact, including two separate recipes for deviled eggs. That’s right, two. First, there were Deviled Eggs with Red Chili Garlic Sauce, and then, there were Mustard Lover’s Favorite Deviled Eggs.

There were also Quick Pickled Radishes with Black Peppercorns, Smoky Ground Cumin & Paprika Corn Salad, Tortellini Pasta Salad with Corn and Blueberries, Delicately Sweet Honey & Lemon Ice Cream, and Tomato-Free Ground Chicken & Red Lentil Chili. All such great recipes, however, none of them were my absolute favorite.

And, while the Honey & Balsamic Blueberry Jam Cookies I made for Blueberry Week almost won the favorite award, I felt that the Saucy Honey & Balsamic Blueberry Jam that I used to make them was even better. Whether used on my morning English muffin, drizzled over ice cream, or used to fill thumbprint cookies, this saucy jam was just too darn good to resist.

Saucy Honey & Balsamic Blueberry Jam

Saucy Honey & Balsamic Blueberry Jam

Ingredients:

  • 2 Pints Fresh Blueberries
  • 1/2 Cup Honey
  • 4 Tablespoons Balsamic Vinegar
  • Pinch of Kosher Salt

Directions:

  1. Rinse the blueberries under cold running water, picking out any bad ones and discarding them.
  2. Place all of the ingredients into a medium stainless steel or non-reactive saucepan over high heat. Stir often.
  3. When the mixture comes to a rolling boil, decrease the heat to medium and allow to cook for an additional 10 to 15 minutes, stirring often.
  4. Spoon or ladle the saucy jam into a clean or sterile glass jar or container, seal the container, and then allow it to come to room temperature. Refrigerate until use.
