And when it comes to those creepy plastic spiders, go all out, the creepier the better. Try and find some creepy plastic spiders that look so realistic, even the cat or dog will be fooled by them.

Ingredients:

  • 6 Extra-Large Hard-Boiled Eggs
  • 3 Tablespoons Mayonnaise
  • Zest of 1 Lemon
  • 1 Teaspoon Lemon Juice
  • 1 Teaspoon Dijon Mustard
  • 1 Teaspoon Honey
  • 1/4 Teaspoon Finely Ground Black Pepper
  • 2 Tablespoons Candied Sliced Jalapeños, Very Finely Diced
  • Green Food Coloring
  • Plastic Spiders

Directions:

  1. Slice each egg in half lengthwise and place the yolk from each egg half into a medium-sized bowl.
  2. Crush the egg yolks with a fork.
  3. Add the mayonnaise, lemon zest, lemon juice, mustard, honey, and black pepper to the yolks.
  4. Mash together with a fork until smooth.
  5. Fold the finely diced candied jalapeños into the mixture.
  6. Add enough food coloring to the eggs to get a desirable color of green.
  7. Place the filling into a large resealable plastic bag, snip the corner off, and then pipe the filling into the well of each egg half.
  8. Garnish each egg half with a spider.

Suggestions:

  • If your egg mixture is too thick, add a bit more mayonnaise or honey to thin it out.
  • I used homemade Candied Sliced Jalapeños in this recipe. However, you can use store-bought candied or pickled jalapeños in this recipe if you choose. If you use pickled jalapeños, I suggest adding a bit more honey for sweetness. Just make sure to very finely dice the jalapeños before adding them to the egg filling mixture.
  • I use gel food coloring because it does not add a significant amount of added moisture, however, you can use liquid if you choose. Start with a little bit at a time. You can always keep adding more to get just the right shade of green.
  • Wash and dry the plastic spiders before using them to garnish the eggs.
