Not all desserts have to be overly sweet. Occasionally, it’s nice to enjoy a dessert with a nice, light, subtly sweet flavor instead. This ice cream is the perfect example. The lemon zest and juice in this frozen dessert, help give it just the right amount of tanginess to balance out the unique sweetness from the honey that it also contains. You’ll definitely fall in love with this delicately sweet homemade ice cream.
About four or five years ago, I finally broke down and purchased an ice cream machine, and let me just tell you, it’s probably one of the best decisions I’ve ever made. So far, it’s been worth every single penny spent and given not only me but many other people great joy. Summertime just wouldn’t be the same without homemade ice cream.
Every time I carry my precious ice cream machine in from its home in the garage, I get crazily excited to come up with a new flavor to experiment with. And recently, after making this Saucy Honey & Balsamic Blueberry Jam, I decided that I needed to make a not-too-sweet variety that would pair well with it. Honey and lemon easily won the battle. Whether you eat this ice cream on its own or with the sauce, it’ll make you super happy to be the owner of your very own ice cream machine.
Ingredients:
- 1 1/2 Cups Whole Milk
- 1/2 Cup Honey
- Juice & Zest of 1 Lemon
- 1/4 Teaspoon Kosher Salt
- 2 Cups Heavy Whipping Cream
Directions:
- Place the milk, honey, lemon zest, lemon juice, and salt into a blender. Blend for 1 minute.
- Add the cream; blend for 30 seconds.
- Pour the mixture into an ice cream machine and churn for 20 to 30 minutes, or until ice cream consistency is reached.
- Spoon the ice cream into freezer-safe containers and freeze for at least 4 hours before serving.
Suggestions:
- Before use, microwave the honey for 10 seconds. This will thin it out slightly, which will make it easier to blend with the other ingredients.
- You can eat the ice cream as soon as it has finished churning, however, it will be on the soft side. I highly suggest freezing it for at least 4 hours before serving.
- When frozen solid, this ice cream will have a slightly grainy texture. Allow the ice cream to sit out for 10 to 20 minutes before serving it. This will make it easier to scoop and allow the ice cream enough time to become creamy again.
Improvements:
- Serve topped with sliced almonds and a drizzle of honey.
