Carrot-Cheddar Soup in Bread Bowls from The Mountain Kitchen
Today would have been my brother Matt’s 48th birthday, so he’s obviously on my mind. This is one recipe he would have been leery to try, however, I’m pretty sure that the cheese and the bread would win him over, and after one little bite, he’d be a huge fan of carrot soup.

Unlike me, Matt was a huge fan of rice. I’m not sure how he would have felt about cauliflower rice, however, if I were to serve him this side dish with chicken and some crusty bread, he most likely would have gobbled it right up.
