Classic holiday cookies are often just that, simply because they are so classic. This recipe puts a new spin on the traditional and classic oatmeal cookie recipe by adding Grape Nuts cereal for added texture. If you’re a real oatmeal cookie fan, then you are definitely going to love these oatmeal cookies, packed full of delicious dried sweetened cranberries and golden raisins.
There are people in this world who vehemently claim that they detest anything with raisins added to it. I’m just going to say it now, “Those people annoy me.” Nine times out of ten, I am willing to bet that their raisin hatred has more to do with hating the raisins of their childhood; dried up, overly sugary, raisins that more resembled mouse turds than they ever did actual raisins. Thanks to better packaging, today’s raisins aren’t nearly so “petrified.” So, if you seriously believe that you don’t like raisins, I beg you to try this recipe. Afterward, if you honestly still think these cookies are the worst thing that you’ve ever had to eat, then I will happily accept the fact that you have a legitimate hatred for all things raisin related. Until then though, I’m still going to claim that it’s all in your head and that you need to put your big girl or boy panties on and eat some dang raisins.
Ingredients:
- 1/2 Cup Unsalted Butter, Softened
- 1/2 Cup Granulated Sugar
- 1 Egg
- 2 Teaspoons Vanilla
- 1 Cup All-Purpose Flour
- 1 Teaspoon Ground Cinnamon
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Kosher Salt
- 1 Cup Old-Fashioned Oats
- 1/2 Cup Grape Nuts
- 1/2 Cup Craisins
- 1/2 Cup Golden Raisins
Directions:
- Preheat oven to 350 degrees.
- Cream the butter and sugar together on medium speed for 2 minutes in a large mixing bowl.
- Add the egg; mix for 30 seconds on medium speed.
- Add the vanilla; mix for 30 seconds on medium speed.
- Whisk the flour, cinnamon, baking soda, and salt together in a small bowl. Use a silicone spatula to mix the flour mixture into the butter mixture until just incorporated.
- Add the oats, grape nuts, craisins, and raisins; stir to combine.
- Cover and refrigerate the dough for 1 hour.
- Use a cookie scoop or tablespoon to scoop cookies out onto a Silpat or parchment paper-lined baking sheet. Slightly flatten each cookie with the palm of your hand. Bake for 10 to 12 minutes, or until the cookies are baked through.
- Allow the cookies to rest for 5 minutes before removing them to a baking rack to finish cooling completely.
Suggestions:
- If you prefer not to have large-sized craisins and raisins in your cookies, feel free to chop them up a bit before adding them to the cookie dough.
- Make sure to refrigerate the cookie dough for at least an hour. If you don’t, the cookies will spread out and become too flat.
- This recipe will yield approximately 2 dozen cookies.
Improvements:
- Sprinkle the top of each cookie with additional grape nuts before flattening and baking them.
- Add a 1/4-cup of chopped pecans or walnuts to the cookie dough.
- Replace the craisins with miniature chocolate chips.
