Muffins:

  • 1 Egg
  • 1/4 Cup Unsalted Butter, Melted (Additional for Greasing Muffin Tin)
  • 2 Teaspoons Lemon Zest
  • 3 Tablespoons Lemon Juice
  • 1/2 Cup Granulated Sugar
  • 1 Teaspoon Baking Powder
  • 1/2 Teaspoon Baking Soda
  • 1/4 Teaspoon Kosher Salt
  • 1 Cup All-Purpose Flour
  • 1 Cup Grated Zucchini, Lightly Packed
  • 1 Tablespoon Poppy Seeds

Lemon Glaze:

  • 1 1/2 Cups Powdered Sugar
  • 2 Tablespoons Lemon Juice

Directions:

Muffins:

  1. Preheat oven to 350 degrees. Lightly grease a 6-cup muffin tin with butter; set aside.
  2. In a large mixing bowl, whisk together the egg, melted butter, lemon zest, lemon juice, and sugar for 1 minute.
  3. Add the baking powder, baking soda, and salt; whisk for 30 seconds.
  4. Add the flour and mix with a silicone spatula until all of the flour is incorporated. Do not overmix.
  5. Using the silicone spatula, fold the grated zucchini and poppy seeds into the muffin batter until evenly distributed.
  6. Use an ice cream scoop to evenly distribute the muffin batter among the greased muffin tin cups.
