You may be wondering why this looks like more of a recipe for crabmeat tacos than it does one for chipotle slaw. There’s a good reason, and it’s not just because I forgot to take pictures of the slaw before I used all of it to create the most delicious lump crabmeat tacos you’ve ever imagined. I’m using these pictures to demonstrate that you can take a simple side-salad/condiment/side-dish such as slaw and make an entirely different meal out of it. I mean this slaw is downright amazing on its own, so much so that I couldn’t stop eating it. Really, I couldn’t stop tasting it; I dirtied fork after fork while “sampling.” But just because a dish is good on its own, doesn’t mean you can’t find other uses for it. This slaw would be just as amazing scooped up on top of a pork barbecue sandwich, sheltered between two slices of cheese on a grilled cheese sandwich, or even as a veggie and sauce base for a warm taco pizza. Don’t be afraid to experiment with things like cole slaw, macaroni salad, potato salad, hummus, and guacamole. They’re amazing on their own, but imagine the potential they possess when combined with other foods.
Ingredients:
- 1 Chipotle Pepper in Adobo Sauce, Minced into a Fine Paste
- 1 Teaspoon Adobo Sauce
- 1/4 Cup Mayonnaise
- 1/4 Cup Sour Cream
- 1/2 Teaspoon Kosher Salt
- 1/4 Teaspoon Freshly Ground Black Pepper
- 2 Tablespoons Chives, Finely Chopped
- 1 Carrot, Grated
- 2 Cups Cabbage, Grated
Directions:
- Whisk chipotle pepper, adobo sauce, mayo, sour cream, salt, pepper, and chives together in a large bowl.
- Add grated carrot and cabbage; stir well.
Suggestions:
- You can purchase a bag of pre-shredded cabbage at most markets, which will cut down on your prep time. They also sell bags of cole slaw mix that have grated carrot included as well, but I don’t recommend foregoing the grated carrot in this recipe. The sweetness from the carrot helps to balance out the spiciness of the chipotle and adobo sauce.
- The slaw will taste better after the ingredients meld together in the fridge for several hours, but it will also become more watery the longer you allow it to set.
- Top a warmed corn tortilla with slaw, warmed lump crabmeat, and some mild cheddar cheese for a quick and delicious crabmeat taco.
Improvements:
- Add crumbled bacon, which will go perfectly with the smokiness of the slaw.
- Add chopped scallions in place of the chives for a stronger onion flavor.
- Add a little bit of freshly squeezed lemon for acidity.
