Me and Miss O’Hara, my fancy dancy crockpot, grew to be even closer friends in the year 2017. We made a ton of soups, stews, and chowders, as well as the occasional main dish. With the ability to throw everything into a crockpot or slow-cooker before work and then come home to a warm comforting meal, I’m fairly certain that Crockpot Monday won’t end anytime soon. It just might not always be on a Monday.
Miss O’Hara Crock-Pot 6-Quart 5-in-1 Multi-Cooker
I had never made French Onion Soup before this recipe, mainly because it just seemed like so much work. By caramelizing the onions in a crockpot first, and then adding the soup ingredients, it made an otherwise labor-intensive recipe fairly simple, not to mention crazy delicious.
Green Chile Enchilada Crockpot Texas Roast
This recipe just goes to show that food can make the world a better place. When several of my fellow food bloggers wanted to raise awareness to the aid still needed after Hurricane Harvey in Texas, this recipe was the result. It sure felt good to share this recipe along with a list of reputable charities that could help those that needed it the most.
Slow-Cooker Spinach & Potato Sweet Curry Soup
The color of this soup is what truly made me fawn all over it. I mean look at it y’all; isn’t it gorgeous? Now, add in the fact that there are spinach and potatoes and a wonderful curry flavor; I’m not sure I’ll ever get enough of this slow-cooker soup.
Game Day Overnight Crockpot Tomato Sauce
Yes, you read that right. A tomato sauce that you cook overnight. Actually, you only caramelize the onions overnight and then put the remaining ingredients into the crockpot in the morning. What really matters, is that with very little work, you’ll totally have a yummy meal when game time comes around.
Lamb & Root Vegetable English Stew
This was the year that I cooked lamb for the first time. What did I learn? Make sure to pick out all of the bones. Very carefully. Other than that, lamb is a real winner as far as I’m concerned. I can’t wait to cook with it again in 2018.
Vegan & Gluten-Free Sweet Potato Crockpot Soup
This recipe was all about giving my vegan and gluten-free friends something they could eat while at my annual Halloween party. While I hate having to cook and bake for everyone’s pesky dietary restrictions, I’d hate it even more if those friends had nothing yummy to eat while at my house.
Rustic Slow-Cooker French Peasant Soup
Something about this soup really made it hard to resist. Perhaps it was the heavy cream. Or maybe, it was the Herbs de Provence, which I have come to absolutely adore this year. Really, I have no earthly idea why this is the one crockpot recipe that I just can’t seem to forget. Maybe it’s a sign that I need to make it again, and this time, perhaps I’ll add bacon.
