I mean, how many people do you know that start baking Christmas cookies when it’s still 90 degrees outside and the leaves are maybe, just maybe, starting to change their colors? Probably not many, right? But you know what y’all? That’s what it takes to develop five new original cookie recipes each holiday season for Christmas Cookies Week.

And, since no one person should eat an entire batch of cookies all by themselves, can you guess what it’s like to share a batch of Christmas cookies with all of your neighbors when it’s still 90 degrees outside? Let’s just say that you may occasionally get some questionable dirty looks. Thankfully for me, this delicious cookie recipe doesn’t scream, “I’m a Christmas cookie and yes, I know that it’s not anywhere near Christmas yet.” For once, I bypassed the neighbor’s questionable dirty looks.

Ingredients:

  • 3/4 Cup Unsalted Butter, Softened
  • 3/4 Cup Light Brown Sugar, Packed
  • 1/4 Cup Granulated Sugar
  • 1 Egg
  • 1 Tablespoon Vanilla
  • 2 Cups All-Purpose Flour
  • 3 Teaspoons Cornstarch
  • 1 Teaspoon Baking Soda
  • 3/4 Teaspoon Kosher Salt
  • 1 Cup Quick-Cooking Oats
  • 1 1/2 Cups Finely Chopped HEATH Milk Chocolate English Toffee Bars (Divided)

Directions:

  1. In a large mixing bowl, cream the butter and sugars together for 2 minutes on medium speed.
  2. Add the egg; mix for 30 seconds on medium speed.
  3. Add the vanilla; mix for 30 seconds on medium speed.
  4. In a medium bowl, whisk together the flour, cornstarch, baking soda, and salt until well combined. On low speed, slowly add the flour mixture to the butter mixture. Mix until just incorporated.
  5. Use a silicone spatula to stir the quick-cooking oats and 1 cup of the finely chopped candy bars into the cookie dough.
  6. Preheat oven to 350 degrees.
  7. Use a cookie scoop or tablespoon to drop mounds of the cookie dough onto a Silpat or parchment paper-lined baking sheet. Press a few pieces of the remaining 1/2 cup of finely chopped candy bars into each cookie dough mound, slightly flattening the top of each cookie in the process.
  8. Bake the cookies for 11 to 13 minutes.
  9. Allow the cookies to rest for 5 minutes before moving them to a baking rack to finish cooling completely.

  • Do not preheat the oven until after you have mixed the cookie dough for this recipe. Allowing the dough to rest while the oven comes to temperature, allows the quick-cooking oats time to absorb some of the cookie dough moisture.
  • HEATH Milk Chocolate English Toffee Bars come in all sizes. I used the snack size, however, you could also use the full-size version. The number of candy bars you need for this recipe will depend on which size candy bar you use.
  • Everyone’s oven is different, so baking times may vary. Make sure to check on the cookies after 11 minutes to make sure that they are not over-baking.
  • This recipe will yield approximately 3 dozen cookies.
