Grab a spoon and get ready to dive right in.
Growing up on a small farm in Spring Gap, Maryland, beer cheese soup was certainly never on the menu in our home. Especially considering that beer only made an appearance one day out of the year in our house. As a bribe/payment for one of the friends who helped my Dad out on butchering day. If any of that beer was leftover at the end of the day, it went into our 50s-style fridge in the basement, and that’s where it stayed until it would eventually be poured down the drain. And I can only guess that it was probably the cheapest, blandest beer ever sold.
Years later, while visiting Bethlehem, Pennsylvania, with B.O.B. Bob and my brother, Matt, for CIGARfest, I stumbled upon Fegley’s Brew Works while they were at their convention and I was shopping my way through the town. And once I saw Bavarian Pretzels listed on their menu, they were the first thing I knew I just had to order. Those pretzels were simply divine, but even better was the beer cheese soup they were served with for a dipping sauce. I was an instant fan. So much so that when we all returned to the same restaurant for dinner, I ordered the exact same thing.
Pretzels or no pretzels, beer cheese soup has been a favorite of mine ever since. And while traditionally it is often found plain, featuring beer and cheese as its main ingredients, I’m always searching for a new way to spice things up. Whether with potatoes, kale, broccoli, carrots, meat, or pasta, beer cheese soup is always a winner. It can be made lighter with milk, or richer with half and half or heavy whipping cream. Honestly, with this type of soup, the sky’s really the limit. So get ready to see more varieties listed here soon, because we’re definitely addicted.
