It’s been almost a year since I made this soup and I’ve been not-so-patiently waiting to share the recipe with y’all for pretty much that entire year. I even wrote about it in this White Bean & Ham Soup with Kale (Ham Steak) recipe post. Each time I would think that the moment to share it was finally right, another recipe would take precedence. That is, until today. Today is the day that I finally get to send this spicy kale and potato soup out into the world so that someone like you can enjoy it as much as B.O.B. Bob and I did last February during our first round with what I now have begun to refer to as “The Dreaded Ick.” As far as icky cold, flu, and virus yuckiness go, 2023 wasn’t really the best year for our household, which might explain why I posted 17 soup recipes in just one lil’ ol’ year. But please y’all, don’t feel like you need a case of the sickies in order to enjoy this soup. I don’t recommend it. The sickies, that is. Because I highly recommend the soup. It may just be my new favorite way to enjoy kale.

Ingredients:

  • 2 Tablespoons Butter
  • 1 Large Sweet Yellow Onion, Peeled & Finely Diced
  • 2 Tablespoons All-Purpose Flour
  • 1 Teaspoon Kosher Salt
  • 1 Teaspoon Dried Thyme
  • 1/2 Teaspoon Finely Ground Black Pepper
  • 1/2 Teaspoon Mustard Powder
  • 1/2 Teaspoon Crushed Red Pepper Flakes
  • 1 (12-oz.) Bottle of Beer
  • 1 (32-oz.) Carton of Low-Sodium Chicken Broth
  • 1 Teaspoon Spicy Brown Mustard
  • 1 Teaspoon Worcestershire Sauce
  • 4 Cups Red Potatoes, Peeled & Diced
  • 1/2 Cup Heavy Whipping Cream
  • 1/2 Pound Chopped Fresh Kale Leaves, Rinsed & Drained
  • 6-oz. Freshly Grated Gouda Cheese

But, what really sets this soup apart, is the addition of beer, which adds a unique sweetness and depth of flavor to help balance out the spice of the red pepper flakes. Directions:

  1. Melt the butter in a large Dutch oven or stockpot over medium heat.
  2. When the butter is melted, add the diced onion, and then sauté for approximately 5 minutes, stirring often, or until translucent.
  3. Stir in the flour, salt, thyme, black pepper, mustard powder, and red pepper flakes. Cook for 2 minutes, stirring constantly.
  4. Slowly pour in the beer, stirring constantly. Cook for 2 minutes.
  5. Add the broth, spicy brown mustard, Worcestershire sauce, and diced potatoes. Stir to combine, cover, and lower the heat to medium-low. Cook for 15 minutes.
  6. Stir the heavy whipping cream and the rinsed and drained kale leaves into the soup. Cover and cook for an additional 5 minutes.
  7. Slowly add the grated cheese to the soup a little bit at a time, stirring well after each addition. Increase the heat to medium-high and cook the soup for an additional 5 minutes, stirring often.

Suggestions:

  • If you are using packaged store-bought pre-chopped kale, I suggest running a knife through it a few more times to chop it even smaller. If the kale is too large it can possibly create a choking hazard.
  • This soup is more brothy than creamy. If you prefer a creamier version, add more heavy whipping cream to the soup.
  • The crushed red pepper flakes are what give this soup its spicy flavor. If you prefer less spice, use a 1/4 teaspoon of crushed red pepper flakes instead of 1/2 teaspoon.
  • This soup will yield approximately 4 bowls of soup.
