This isn’t the first time I’ve taken the lazy way out and given ice cream as a gift. And you know what? It won’t be the last. What can I say? I don’t have a lot of time to go out shopping for the perfect gift and who doesn’t love the heck out of some ice cream? Especially when it’s homemade. But wait, add in a bit of bourbon, and it gets even better. Especially, when the person you’re gifting the ice cream to as a gift is a huge fan of bourbon. So, the next time a birthday, anniversary, or other random celebratory occasion comes around, ditch the trip to the store. Be lazy, drink a glass of bourbon, and make ice cream instead.

Ingredients:

  • 3/4 Cup Light Brown Sugar, Packed
  • 1/2 Cup Bourbon
  • 2 Tablespoons Unsalted Butter
  • 1/2 Teaspoon Kosher Salt
  • 2 Cups Cherries, Halved & Pitted
  • 1 Tablespoon Vanilla
  • 1 Cup Whole Milk
  • 2 Cups Heavy Whipping Cream

Directions:

  1. Place the sugar, bourbon, butter, and salt into a medium non-stick saucepan over high heat. Stir constantly until the mixture comes to a rolling boil.
  2. When the mixture comes to a rolling boil, continue to cook for 3 minutes, stirring constantly.
  3. Remove the pan from the heat and stir in the cherries and vanilla.
  4. Pour the mixture into a blender along with the whole milk; purée for 30 seconds.
  5. Add the whipping cream; purée for an additional 30 seconds.
  6. Pour the mixture into an ice cream machine and churn for 25 to 30 minutes, or until ice cream consistency is achieved.
  7. Spoon the ice cream into a freezer-safe container and freeze for at least 4 hours before serving.

Suggestions:

  • Make sure the stove is off when you add the bourbon to the saucepan for safety reasons. There’s no need to burn the house down. This is also why you should stir the pan constantly and stay by it at all times.
  • You can use either unsalted or salted butter in this recipe. It won’t make that much of a difference.
  • If you’d like, allow the blended ice cream mixture to rest in the refrigerator overnight in an airtight container. I churned mine immediately because I didn’t have the time to wait and the heavy whipping cream cooled it down enough to churn.
