I can honestly say that, that in my life, I haven’t had the pleasure of eating Swedish Meatballs as much as I would have liked. It’s a shame really. When trying to come up with a reason, the only thing that I can think of is that they are simply something which isn’t served at most restaurants and that most people just never think of making. Really, it’s a little sad. They’re amazing, quite easy to make, and taste so very stinkin’ delicious.
These particular Swedish Meatballs are even better. They’re a little bit sweet, a little bit spicy, and a whole lotta creamy tender beef goodness. And, when served with extra Sweet & Spicy Cranberry Jalapeño Jam Sauce, they’re next to impossible to resist. Make them for your next large get together to see what I’m talking about. I guarantee that they’ll practically disappear before your eyes and have everyone begging you for the recipe.
Ingredients:
Meatballs:
- 2 Eggs
- 1/2 Cup Heavy Whipping Cream
- 1 Teaspoon Ground Sea Salt
- 1 Teaspoon Finely Ground Black Pepper
- 1/2 Teaspoon Crushed Red Pepper Flakes
- 1/2 Teaspoon Garlic Powder
- 4 Slices White Bread, Cut into Very Small Cubes
- 3 Pounds 90% Lean Ground Beef
- 1 (12-oz.) Bottle of Lager
- 1 1/2 Cups Sweet & Spicy Cranberry Jalapeño Jam Sauce (See Recipe Below)
- 1 Cup Heavy Whipping Crean
- 1 Teaspoon Ground Sea Salt
- 1 Teaspoon Finely Ground Black Pepper
- 2 Jalapeños, Deseeded & Finely Diced
- Extra Sweet & Spicy Cranberry Jalapeño Jam Sauce & Finely Diced Jalapeño for Serving
Sweet & Spicy Cranberry Jalapeño Jam Sauce:
- 3 Cups Cape Cod Select Premium Frozen Cranberries
- 1 1/4 Cups Granulated Sugar
- 1/2 Cup Light Brown Sugar, Packed
- 1 Cup Water
- Juice of 1 Lemon
- 1/2 Teaspoon Kosher Salt
- 5 Jalapeños, Deseeded & Finely Diced
Directions:
Meatballs:
- Preheat oven to 400 degrees.
- In a large bowl, whisk the eggs together until well combined. Add the 1/2-cup whipping cream, 1-teaspoon salt, 1-teaspoon black pepper, red pepper, and garlic powder; whisk until well combined.
- Add the cubed bread, give it a stir, and then allow it to rest for 5 minutes and absorb the egg and cream mixture.
- Use your hands to mix the ground beef into the soaked bread. Use a cookie scoop to measure the ground beef into evenly sized meatballs, roll them between the palms of your hands, and place them on a baking sheet coated with cooking spray.
- Bake for 15 to 20 minutes or until lightly browned.
- Carefully place the baked meatballs into a large crockpot.
- Add the lager, Sweet & Spicy Cranberry Jalapeño Jam Sauce, 1-cup heavy whipping cream, 1-teaspoon salt, 1-teaspoon black pepper, and finely diced jalapeños to the crockpot. Gently stir to combine.
- Cook on high heat for 4 hours or low heat for 8 hours.
- Serve drizzled with or alongside extra Sweet & Spicy Cranberry Jalapeñno Jam Sauce and sprinkled with extra finely diced jalapeño.
Sweet & Spicy Cranberry Jalapeño Jam Sauce:
- Place the cranberries, granulated sugar, brown sugar, water, lemon juice, and salt into a large non-reactive metal pan. Cook over high heat for 6 minutes, stirring constantly, or until the cranberries burst open and the mixture begins to foam.
- Remove from heat and puree for two minutes in a blender or with an immersion blender.
- Add the finely diced jalapeños and return to high heat for 5 minutes, stirring constantly.
- Pour the jam sauce into clean glass jars, allow to come to room temperature, and then refrigerate until use.
Suggestions:
- Do not overmix the hamburger and bread mixture. Mix it with your hands until just well combined.
- Make sure to gently stir the meatballs, so that you don’t break them apart. If you are around while they are cooking in the crockpot, give them a gentle stir every few hours. It’s not necessary, but it certainly doesn’t hurt.
- If you’re a huge fan of spicy food, you can add even more diced jalapeños if you choose, or leave the seeds in.
- CLICK HERE to see the original Sweet & Spicy Cranberry Jalapeñno Jam Sauce recipe post and find tips on how to make and use it.
- Use the remaining jam sauce to make cocktails, meatballs, grilled chicken, meatloaf, or as a topping for cream cheese to serve with crackers as an appetizer.
Improvements:
- To enjoy these meatballs as a meal, serve them over mashed potatoes.
- Make a sandwich with these meatballs. Top with Pepper Jack or Havarti cheese.
- Make extra meatballs and jam sauce to freeze. That way, you can have everything ready to throw in a crockpot on a day when you don’t feel like cooking or you need a last-minute appetizer.
- Use some of the leftover Sweet & Spicy Cranberry Jalapeño Jam Sauce to make this Warm Cranberry & Jalapeño Sweet Potato Salad or these Bacon-Wrapped Cranberry Jalapeño Crackers.
