You’re just seven ingredients away from the best lemony cheesecake ice cream you’ve ever tasted. The secret? Fresh lemon juice and zest, heavy whipping cream, cream cheese, sugar, vanilla, and a touch of salt. And, to top things off, a few freshly sliced strawberries. Because every lemony dessert tastes just a little bit better with fresh fruit, am I right?
When life gets difficult, I think we can all agree that ice cream makes it just a little bit better, am I right? Especially if that ice cream is made with just a few simple ingredients, which almost all of us have in our fridge or pantry. And, if we don’t have those specific ingredients in our pantry, hopefully, we’re blessed enough to have a store or neighbor nearby who can help us out, right? After all, that’s what being a great neighbor is all about, lending a cup of sugar to those in need. Basically, sugar is the secret ingredient to being a good neighbor. So make sure to stock up. You never know when a neighbor will come knocking on your door.
Ingredients:
- 3 Cups Heavy Whipping Cream
- 2/3 Cup Granulated Sugar
- 1 (8-oz.) Box Cream Cheese, Softened
- 1 Teaspoon Vanilla Extract
- 1/4 Teaspoon Kosher Salt
- 2 Lemons
- Fresh Strawberries, Sliced
Directions:
- Place the heavy whipping cream, sugar, cream cheese, vanilla, and salt into a blender.
- Zest both of the lemons and add the zest to the blender.
- Juice both of the lemons and add the juice to the blender.
- Blend until smooth.
- Pour the mixture into an ice cream machine. Churn until ice cream consistency is reached.
- Spoon the ice cream into a freezer-safe container and freeze for at least 4 hours before serving.
- Serve topped with sliced strawberries.
Suggestions:
- When blending, the ice cream mixture will be extremely thick.
- Zest a little bit of additional lemon zest on top of the ice cream when serving.
Improvements:
- In lieu of strawberries, serve this ice cream with fresh raspberries or blueberries.
- Use vanilla bean paste in lieu of vanilla extract.
- For lighter ice cream, replace half of the heavy whipping cream with whole milk.
