These delicious holiday cookies are spiced with ginger, cinnamon, nutmeg, and cloves for a festive flavor. To make them even better, they are topped with a delicious eggnog powdered sugar icing. With the combination of spices and sweet eggnog icing, these iced eggnog chewy spice cookies are sure to please.
It’s December and if I’m already sharing five Christmas cookie recipes in one week, why not add on one more? I mean, seriously, who doesn’t need an extra cookie recipe in their life? Especially if it’s a chewy, perfectly spiced, holiday cookie topped with an eggnog powdered sugar icing. So, here you go, a bonus cookie recipe. A sweet gift from me to you. Happy Holidays.
Ingredients:
Spice Cookies:
- 3/4 Cup Unsalted Butter, Softened
- 1 Cup Granulated Sugar
- 1 Egg
- 1 Teaspoon Vanilla
- 1/3 Cup Molasses
- 2 1/4 Cups All-Purpose Flour
- 2 Teaspoons Baking Soda
- 2 Teaspoons Ground Ginger
- 1 Teaspoons Ground Cinnamon
- 1/8 Teaspoon Freshly Ground Nutmeg
- 1/8 Teaspoon Ground Cloves
- 3/4 Teaspoon Kosher Salt
Eggnog Icing:
- 1 Cup Powdered Sugar
- 3 Tablespoons Eggnog
Directions:
Spice Cookies:
- Preheat oven to 350 degrees.
- In a large mixing bowl, cream the butter and sugar together on medium speed for 2 minutes.
- Add the egg, vanilla, and molasses; mix on medium speed for 2 minutes.
- Whisk together the flour, baking soda, ginger, cinnamon, nutmeg, cloves, and salt in a medium bowl. On low speed, slowly add the flour mixture to the butter mixture a little at a time until all of the flour is just incorporated.
- Use a small cookie scoop to scoop the dough out onto a Silpat or parchment paper-lined baking sheet.
- Bake for 10 minutes.
- Allow the cookies to cool for 5 minutes before removing them to a baking rack to finish cooling completely.
Eggnog Icing:
- In a small bowl, whisk the powdered sugar and eggnog together.
- Drizzle or dollop a little bit of the icing on top of each spice cookie.
- Allow the icing on the spice cookies to set for a few hours before storing the cookies in an airtight container between layers of wax paper.
Suggestions:
- These cookies are slightly salty, which helps to balance out the sweetness. If you prefer to use less salt, you certainly can.
- If you’re not a huge fan of ginger, cinnamon, nutmeg, or cloves you can always decrease the amount used in this recipe.
- Sift the powdered sugar before making the eggnog icing. This will help prevent lumps and make a smoother icing.
- Refrigerate these cookies if you are not eating or serving them within a few days of baking them due to the eggnog in the icing.
- This recipe will yield approximately 3 dozen cookies.
Improvements:
- If you’re not a huge fan of eggnog, or perhaps you don’t have it available, replace it with milk, half and half, or heavy whipping cream.
- Add miniature semi-sweet chocolate chips to the cookie dough.
- Sprinkle a few sliced almonds on top of each iced spice cookie.
