I’m always looking for a way to switch up a traditional chocolate chip cookie recipe and make it just a wee bit different. And thanks to a little bit of cocoa powder and flakey sea salt, these cookies are definitely a far cry from your normal run-of-the-mill chocolate chip cookie. And, if you actually bother to scroll down through this recipe and take a look at the suggestions, you’ll see that I am not shy about telling you not to forget the flakey sea salt or Fleur de Sel in this recipe.

I’m pretty sure that almost 98% of the people reading this recipe never seem to give a flying fig about the suggestions or improvements I’ve shared, however, I spend a whole lot of my time including them in these posts, as well as this lil’ descriptive tidbit blurb you’re reading right now. So, in my mind, I would like to think that everyone actually gave a crap and took the time to read what I’ve written. Some of y’all will, some of y’all won’t. Whichever one of those you happen to be, just make sure not to leave out the sprinkle of dang salt. It’s definitely the not-so-secret ingredient to this cookie recipe’s success.

Ingredients:

  • 1 Cup of Unsalted Butter, Softened
  • 2/3 Cup Granulated Sugar
  • 1 Egg
  • 1 Tablespoon Vanilla
  • 1/4 Cup Unsweetened Cocoa Powder
  • 1 Tablespoon Corn Starch
  • 1/4 Teaspoons Kosher Salt
  • 2 Cups All-Purpose Flour
  • 1 (10-oz.) Bag Semi-Sweet Chocolate Chips
  • Flakey Sea Salt or Fleur de Sel

Directions:

  1. In a large mixing bowl, cream the butter and sugar together for 2 minutes on medium speed.
  2. Add the egg and vanilla; mix for 1 minute on medium speed.
  3. Add the cocoa powder, corn starch, and salt; mix at low speed until just incorporated.
  4. Add the flour; mix at low speed until just incorporated.
  5. Fold the chocolate chips into the cookie dough until evenly distributed.
  6. While the cookie dough is resting at room temperature, preheat your oven to 350 degrees.
  7. When the oven reaches temperature, use a cookie scoop or tablespoon to place the cookie dough onto a Silpat or parchment paper-lined baking sheet.
  8. Sprinkle the top of each cookie with a little bit of flakey sea salt or Fleur de Sel before baking.
  9. Bake the cookies for 10 to 12 minutes, or until the top of each cookie is set and no longer appears wet.

Suggestions:

  • Do not forget to sprinkle a little bit of flakey sea salt or Fleur de Sel over the cookies before baking. It really helps to make these cookies amazing.
  • Allow the cookies to rest for a few minutes before removing them to a baking rack to finish cooling completely.
  • This recipe will yield approximately 3 dozen cookies, depending on how much dough you use to make each cookie.
