If you’re searching for a deviled egg recipe that is just as flavorful as it is gorgeous, look no further. These pimento and chive-topped deviled eggs are stunning, yet packed with flavor as well. Sweet honey, chili powder, flaky sea salt, black pepper, mayonnaise, and a little touch of balsamic vinegar, combined with a jar of diced pimentos and freshly chopped chives, is all that it takes to make an appetizer that absolutely no one will be able to resist.
Chile powder versus chili powder. You may just learn something you didn’t already know if you keep on reading, and the difference is more than one ending with an e and the other ending with an i. Chile powder, with an e, is made from ground chilies. Chili powder, with an i, is made with many other added ingredients added to those ground chilies, such as paprika, pepper, cumin, oregano, garlic powder, onion powder, and/or salt. Mind-blowing, right? Or perhaps not. Maybe you already knew this. Honestly, it’s never really something I’d thought to research before. I was simply curious enough to search for the correct spelling and stumbled across several posts about the differences between the two. I guess this explains why I prefer certain brands of chili powder over others. And, in case you’re wondering which is my favorite, I prefer Penzeys Regular Chili Powder. It’s a bit milder than the large mega-sized variety of chili powder that Costco sells. In the future, I guess when it comes to chili powder, a little bit of taste-testing is in order.
Ingredients:
- 9 Hard-Boiled Eggs
- 1/2 Cup Mayonnaise
- 1 Tablespoon Honey
- 1 Teaspoon Balsamic Vinegar
- 1/4 Teaspoon Freshly Ground Black Pepper
- 1/4 Teaspoon Chili Powder (Additional for Garnish)
- 1 Tablespoon Fresh Chives, Finely Chopped (Additional for Garnish)
- 1 (4-oz.) Jar of Diced Pimentos (Divided)
- Fleur de Sel or Flaky Sea Salt
Directions:
- Drain the pimentos and then place them between several layers of paper towels to pat off and absorb any excess liquid.
- Halve the deviled eggs lengthwise, placing the yolks into a food processor.
- Add the mayonnaise, honey, vinegar, pepper, chili powder, chives, and 1 tablespoon of the dried pimentos to the food processor. Blend until completely smooth.
- Fill the egg whites with the blended yolk mixture and then garnish with the reserved pimentos and additional finely chopped fresh chives. Sprinkle with chili powder and a little bit of flaky sea salt.

- I always use extra-large eggs when making deviled eggs. If you are using smaller eggs, you may need to adjust the amount of mayonnaise used in this recipe, to prevent the filling from turning runny. I suggest adding the mayonnaise to the food processor last. Start with half of the mayonnaise and then keep adding it as needed to create a creamy egg filling. This will help you to reach the perfect deviled egg consistency.
- If your filling does become too runny, try adding extra hard-boiled egg yolks, bread crumbs, or instant mashed potato flakes to thicken the consistency.
- If you don’t have fresh chives available, use 1 teaspoon of dried chives in the egg filling and omit the fresh chives as a garnish.
- I use a food processor for this recipe so that the deviled egg filling is smooth. If you don’t mind the filling being chunky, you can mash the egg filling with a fork in a small bowl.
- Fill a resealable plastic bag with the egg yolk mixture, snip off the corner, and fill the egg whites with the yolk mixture.
Improvements:
- Replace the honey in this recipe with chili-infused hot honey.
- Instead of flaky sea salt, top with crispy crumbled bacon.
- Replace the fresh chives in this recipe with fresh parsley.
