Not only do these peppermint holiday cookies practically melt in your mouth, but due to their flaky texture, they almost crumble apart at the gentlest touch. Thankfully the white chocolate they are drizzled with helps keep them together just long enough for you to get them from your hand to your mouth. Sure there may be a few crumbs dropped during the process, but who can’t live with a few crumbs at Christmas time?
With these melt-in-your-mouth peppermint holiday cookies, I can pretty much guarantee that Santa’s definitely gonna be leaving behind some serious crumbs this year before he heads back up the chimney. Don’t worry though, it’s nothing a little vacuuming won’t take care of, and maybe he’ll leave behind an extra little gift for your trouble. You know, like a new vacuum cleaner that actually works without you cussing at it every two minutes.
But seriously, not only are these white chocolate-drizzled cookies just about the flakiest you’ve ever tasted, but they’re also packed with just the right amount of peppermint to make your mouth want to bust spontaneously out into song. Now, whether your mouth chooses to sing “White Christmas” or “Grandma Got Run Over by a Reindeer Wielding a Piece of Crap Vacuum Cleaner” is totally up to you.
Ingredients:
- 1 Cup Unsalted Butter, Room Temperature
- 3/4 Cup Corn Starch
- 3/4 Cup Powdered Sugar
- 1 1/2 Teaspoons Pure Peppermint Extract
- 1/2 Teaspoon Kosher Salt
- 1 Cup All-Purpose Flour
- 1 Cup White Chocolate Melting Wafers
- Finely Crushed Candy Canes or Peppermints
Directions:
- Preheat oven to 350 degrees.
- In a large mixing bowl, mix the butter and corn starch together on medium-low speed for 2 minutes.
- Turn the mixer off and add the powdered sugar, peppermint extract, and salt.
- Turn the mixer on again and mix for 2 minutes on low speed.
- Slowly add the flour and mix until just incorporated.
- Use a cookie scoop or a large spoon to measure out even-sized amounts of dough. Roll each scoop of dough between the palms of your hands to make a ball and then place each ball onto a Silpat or parchment paper-lined baking sheet. Gently press the top of each cookie down with the palm of your hand. Bake for 9 minutes or until lightly brown around the edges.
- Allow the cookies to cool on the baking sheet for 5 minutes before carefully removing them to a baking rack to finish cooling completely.
- Place the white chocolate melting wafers into a small bowl and microwave them for 1 minute. Stir and then continue to microwave in 15-second increments until smooth, stirring after every 15-seconds of microwaving. Drizzle the melted chocolate over the cookies and then top with finely crushed candy canes or peppermints.
- Allow the cookies to set for a few hours before storing them in an airtight container.
Suggestions:
- These cookies are crazy fragile, so be very gentle when removing them from the baking tray to cool.
- Make sure to use white chocolate melting wafers and not white chocolate chips. Trust me on this one. White chocolate chips do not microwave well and you will end up with a hot mess instead of lovely smooth melted white chocolate.
- If you’d like, you can pour the melted chocolate into a small plastic baggie, snip off the end, and then pipe the chocolate onto each cookie. You can also just use a fork or small whisk to drizzle the chocolate over the cookies. Use whichever method you feel most comfortable with.
- This recipe will yield approximately 24 cookies. The number of cookies you end up with will depend on how large you make each cookie.
Improvements:
- Drizzle the cookies with dark chocolate instead of white chocolate.
- Replace the peppermint extract with vanilla extract.
- Decorate the cookies with sanding sugar or sprinkles instead of finely crushed candy canes or peppermints.
