This one-pot soup combination of store-bought pillowy potato gnocchi, savory diced ham steak, and aromatic herbs all simmered together, delivers a convenient, delicious, and satisfying meal, perfect for those nights when you need a little bit of simple comfort food, fast.
After ten-plus years of recipe blogging regularly, I am still constantly gobsmacked to discover that there are certain non-fancy-schmancy ingredients I have either not used at all or have rarely used. And, after looking back at previously posted recipes, it seems that gnocchi is one of those highly neglected ingredients. While I know that B.O.B. Bob and I have certainly enjoyed potato gnocchi more than once since I began blogging in August of 2013, the only recipe I seem to have shared to date with its use was for this Guinness Stew Cincinnati Chili with Gnocchi. And yeah, that’s just a big ol’ shame on me because that dang chili is totally a must-make if you’re a fan of Guinness stew and/or Cincinnati chili. And while I will freely admit to that particular recipe being the type of recipe you reach for when you have time to kill on a cold winter’s day, this recipe right here, for this Italian-seasoned ham and gnocchi soup, well let’s just say that it’s, for sure, an every single day of the week kind of recipe. It comes together quicker than Domino’s, Pizza Hut, or that mediocre Chinese place down the street can deliver to your kitchen door, and it sure as hell tastes a whole heck of a lot better. So, the next time you’re at the market, make a mad dash for the pasta aisle and grab a package of gnocchi to make this easy weeknight soup recipe. Y’all, don’t be a fool like me and potentially wait another ten-plus years to enjoy such a delicious and versatile ingredient.
Ingredients:
- 2 Tablespoons Extra-Virgin Olive Oil
- 1 Large Sweet Yellow Onion, Peeled & Finely Diced
- 2 Teaspoons Italian Herb Seasoning Mix (No-Salt)
- 1/2 Teaspoon Finely Ground Sea Salt
- 1/2 Teaspoon Finely Ground Black Pepper
- 1 (32-oz.) Carton Low-Sodium Chicken Broth
- 5 Small Carrots, Peeled & Sliced
- 1 (8-oz.) Boneless Ham Steak, Diced
- 1 (16-oz.) Package Potato Gnocchi
- 1/2 Cup Heavy Whipping Cream
- Freshly Grated Parmesan Cheese
Directions:
- Place the olive oil in a large stockpot or Dutch oven over medium heat.
- When the oil is hot, add the onion and sauté for 6 to 8 minutes or until softened. Stir often.
- Add the Italian seasoning, salt, and pepper. Sauté for 1 minute stirring constantly.
- Add the chicken broth and carrots. Stir to combine. Increase the heat to high and bring to a boil. Stir occasionally.
- When the soup comes to a boil, add the ham and gnocchi. Cook for 4 minutes, stirring occasionally.
- Lower the heat to low and add the heavy whipping cream. Stir to combine.
- Simmer for 5 minutes, stirring occasionally.
- Serve topped with freshly grated parmesan cheese.
Suggestions:
- I used this Homemade Italian Herb Seasoning Mix (No-Salt) for this recipe. If you are using store-bought Italian seasoning with salt included, you may wish to leave out the sea salt in this recipe. If needed, you can always add salt before serving.
- Use small carrots for this recipe if possible. This soup requires very little cooking time, so for the carrots to soften, they will need to be of smaller size. If you are using larger carrots, you may want to dice the carrots instead of slicing them.
- I used a boneless ham steak for this recipe. You can use whatever variety of ham you choose. Leftover holiday ham or ham lunch meat would both work well for this recipe.
- I highly recommend using freshly grated parmesan cheese for this recipe instead of store-bought pre-grated or pre-shredded cheese.
- Garnish the soup with a little bit of freshly ground black pepper if so desired.
Improvements:
- Replace the ham steak with browned sausage, crisped prosciutto, or crispy bacon.
- Use ham broth or stock instead of chicken broth. To make homemade ham stock, place a ham bone in a large pot, fill the pot with cold water, and then bring the pot to a boil over high heat. Reduce the heat to low and allow to simmer for 2 hours. Strain out any ham, fat, and bones before use. If you do choose to use ham stock, consider leaving out the salt called for in this recipe.
- Add additional vegetables to this soup. Frozen peas, corn, or green beans would all work well.
- Garnish this soup with freshly grated cheddar cheese instead of parmesan cheese.
