I’m going to tell y’all a little story today, and no, it has absolutely nothing at all to do with this super easy and quick weeknight tortellini soup. Instead, it’s all about what was probably one of the most hilarious type-o’s of the year, which literally led to me sitting in my car, crying from laughter.

Earlier this week, Debbie from The Mountain Kitchen shared a post from WiperTags on her Facebook page. I happened to see the post while in my car driving to work. Yes, I am that person who checks their email, social media, etc. while being stuck at each and every traffic light. It’s how I get stuff done. Below is a video of the product she was sharing.

Now obviously, I immediately fell in lust with these windshield wipers at first sight and responded with, “We need this!!! Both Bob and I!” After pondering over these products for a few more minutes, yet another traffic light, and clicking on the site to find out more about them, I came to a sudden realization. Neither Bob nor I actually have rear wipers on our vehicles. So, I responded again with what was supposed to be, “Too bad our cars don’t have rear wipers!”

That would have been the end of my traffic light posting if I hadn’t seen her response to my comment, which was, “Lmao!! Gross!” That response certainly had me wondering if Debbie had done gone and lost her mind. What the heck could possibly be so funny or gross about neither Bob nor I having rear windshield wipers on our vehicles?

Then I took a look at my comment again and immediately burst out laughing. It’s amazing how changing one little letter in a sentence can make such a huge difference. While intending to write, “Too bad our cars don’t have rear wipers?” I actually wrote, “Too bad our cats don’t have rear wipers!”

Now ya’ll, I’m guessing you have just about the same image in your head as I do after reading that sentence. Brenna sporting a rear windshield wiper would certainly be a sight to behold. Imagine the shit that would fly. Literally. I don’t think I stopped laughing or crying until I actually pulled into my work parking lot. I’m pretty sure that one little type-o was the highlight of my and Debbie’s day.

By the way Debbie, I actually found out that “Cat Rear Wipers” do in fact exist. Who knew? Not quite as thrilling as imagining a real cat actually wearing one but it’s still funny nonetheless.

  • 1 (16-oz.) Carton Half & Half
  • 1 (14.5-oz.) Can Sliced Carrots, Rinsed & Drained
  • 1 (13.5-oz.) Can Leaf Spinach, Rinsed, Drained, & Squeezed Dry
  • 1/2 to 1 Teaspoon Finely Ground Black Pepper
  • 1/2 Teaspoon Onion Powder
  • 1/2 Teaspoon Paprika
  • 1/4 Teaspoon Ground Sea Salt
  • Pinch of Freshly Ground Nutmeg
  • 1 (20-oz.) Package Refrigerated 5 Cheese Tortellini

Directions:

  1. Place all of the ingredients, except for the tortellini, into a large pot over high heat, stirring occasionally.
  2. Bring to a rolling boil, add the tortellini, and cook for 4 minutes, stirring constantly.

Suggestions:

  • Rinsing and draining the canned vegetables helps to get rid of the salty liquid in which they are packaged. Squeeze the spinach to get out any excess liquid.
  • Make sure to use refrigerated fresh tortellini for this recipe, not dried tortellini.
  • I used 1 teaspoon of finely ground black pepper in this recipe because I like a lot of black pepper. Adjust the amount of pepper according to your own taste.
  • There is not a lot of liquid in this soup. Add an additional 14.5-oz. can of low-sodium chicken broth if you prefer more liquid in your soup.
  • If you have leftover soup, the tortellini will soak up most of the liquid, turning it into a creamy pasta dish. It’s just as good as the soup.
