  • 3 Cups Rice Cereal
  • 1/2 Cup Light Brown Sugar, Packed
  • 1/2 Cup Light Corn Syrup
  • 1 Tablespoon Butter Flavored Organic Coconut Oil or Unsalted Butter
  • 1 Teaspoon Vanilla
  • 1/2 Cup Peanut Butter
  • Fleur de Sel or Ground Sea Salt

Directions:

  1. Place the cereal in a large glass or metal mixing bowl; set aside.
  2. In a large saucepan, over medium heat, stir the sugar, corn syrup, and coconut oil or butter together. Cook until the sugar is completely dissolved, stirring constantly. Do not allow to come to a boil. Remove from heat.
  3. Stir in the vanilla and then the peanut butter until well combined.
  4. Coat the cereal with the peanut butter mixture and stir to combine.
  5. Use a large spoon or a small cookie scoop to place mounds of the coated cereal mixture onto a Silpat or wax paper-lined baking sheet.
  6. Immediately top each cookie with a light sprinkling of Fleur de Sel or ground sea salt.
  7. Allow the cookies to cool and firm up before storing in an airtight container between sheets of wax paper.

  • Stir the cereal and peanut butter mixture together as fast as you can and form your cookies quickly before the entire mixture starts to firm up.
  • I crush the Fleur de Sel between my fingers as I sprinkle it onto the cookies to ensure that each cookie isn’t overloaded with salt. You can replace the Fleur de Sel with a sprinkling of normal ground sea salt, or leave it out altogether if you choose.
