They’re not overly sweet, making them the perfect breakfast treat. Paired with fresh fruit, this is one breakfast muffin you’ll be excited to roll out of bed for.
Sometimes love comes in the shape of a muffin. A muffin chock full of rich, creamy, sinfully delicious dark chocolate chunks. A muffin that makes you pretty much want to jump out of bed in the morning and sing, “It’s a beautiful morning. Ahh. I think I’ll go outside awhile. And just smile.” And then there are other times. Sigh. Times when love comes in the form of granting someone you love dearly an odd and somewhat nutty request. Over the weekend, my dad being my dad, made such a request. A request, that while not all that surprising coming from him, was certainly not the type of request most ordinary people would even think to consider.
While at a funeral earlier in the day, my dad decided that it was a real shame that people don’t get to see the photo/slide show that is shown at their own funerals. So, guess what I’ll be doing over the next month or two? That’s right, I’ll be putting together a photo/slide show for him to view since he won’t be able to watch it when his time to leave this earth finally comes around. Is it a little morbid? Yes. But that’s what the man wants. And, honestly, after losing both my brother and my mom so suddenly, I can appreciate not having to deal with this task at the last minute, feeling rushed and under pressure when the loss of someone already has you overly stressed and emotional.
And, since I agreed to my dad’s strange and unusual request, I asked something of him in return. He’s now in charge of picking 20 to 30 songs that he would like played during the photo/slide show. He, of course, thought this was way too many songs, however, I assured him that no one wants to hear the same 5 songs played over and over while they’re watching the slide show of someone who has just passed away. Who knows, maybe he’ll actually pick “It’s a beautiful morning. Ahh. I think I’ll go outside awhile. And just smile.” It’s at least a happy song. Not really the song you think of when you’re pondering a funeral, but heck, when it comes to funerals, especially my dad’s, why be normal?
Ingredients:
- 6 Tablespoons Unsalted Butter, Softened
- 4-oz. Cream Cheese, Softened
- 1/3 Cup Light Brown Sugar, Packed
- 1/4 Cup Granulated Sugar
- 2 Eggs
- 1/3 Cup Sour Cream
- 2 Teaspoons Vanilla
- 1 Teaspoon Balsamic Vinegar
- 1 Cup + 2 Tablespoons All-Purpose Flour
- 1/2 Cup Unsweetened Cocoa
- 1 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 1/2 Teaspoon Kosher Salt
- 22 Dove Dark Chocolate Promises (Divided)
Directions:
- Preheat oven to 400 degrees.
- On medium speed, cream the butter, cream cheese, brown sugar, and granulated sugar together for 2 minutes in a large mixing bowl.
- Add the eggs; mix on medium speed for 1 minute.
- Add the sour cream, vanilla, and balsamic vinegar; mix on medium speed for 1 minute.
- In a small bowl, sift together the flour, cocoa, baking powder, baking soda, and salt. Add the dry ingredients to the wet ingredients and mix by hand with a silicone spatula until just incorporated. Do not over-mix.
- Unwrap all of the chocolates and discard the wrappers. Roughly chop 16 of the chocolates and add them to the muffin batter. Fold the chocolate into the batter until evenly dispersed. Do not over-mix.
- Line a muffin tin with 9 paper muffin liners. Evenly divide the batter among the paper muffin liners.
- Roughly chop the remaining 6 chocolates and top each muffin with a little bit of the chopped chocolate.
- Bake for 16 to 19 minutes, or until a knife or toothpick inserted into the middle of a cupcake comes out clean.
Suggestions:
- I used Dove Dark Chocolate Promises “Gifts” for this recipe, however, you can use any shape or variety of Dove Dark Chocolate Promises you have on hand. I always check the clearance aisle after the holidays for chocolate to use throughout the year in my baking. It doesn’t matter what the shape of the chocolate is if you’re going to chop it up for use in a recipe, so why not try to buy it at 50% off?
- Allow the muffins to cool for 10 minutes before removing them to a baking rack to finish cooling completely.
- If you aren’t planning on eating all of the muffins immediately, wrap them individually in plastic wrap so that they will not dry out. If your muffins should happen to dry out, wrap them in a damp paper towel and microwave them for 15 seconds. The chocolate may melt a bit, however, the muffins will soak in a little of the moisture from the paper towel.
- This recipe will yield 9 muffins.
Improvements:
- Add 1/2 teaspoon to 1 teaspoon of espresso powder to the muffin batter.
- Before baking, top each muffin with sliced almonds or finely chopped pecans.
- Cut these muffins in half, warm them in a microwave for 15 seconds, and then serve them spread with strawberry jam or preserves.
