Some really great recipes have come out of my kitchen over the past month, including one for Twice Cooked Potatoes with Spicy Ketchup, as well as one for a green veggie-packed Spring Green Quiche, however, I think my First Monday Favorites recipe for the month of March is without a doubt the one for these Drunken Irish Mussels. I am always amazed when a few basic ingredients can turn something very simple into something over-the-top spectacular, and these mussels are nothing short of spectacular. They make just as great of a meal as they do an appetizer, making them the perfect Fish Friday meal after a long week. Just make sure to serve them with thick slices of crusty bread so that you can sop up every last bit of the delicious liquid these little beauties are cooked in.
