First Monday Favorites – April 2017

Heavy whipping cream, Irish butter, and Jameson Irish Whiskey make these mussels delightfully decadent and sinfully irresistible.

Some really great recipes have come out of my kitchen over the past month, including one for Twice Cooked Potatoes with Spicy Ketchup, as well as one for a green veggie-packed Spring Green Quiche, however, I think my First Monday Favorites recipe for the month of March is without a doubt the one for these Drunken Irish Mussels. I am always amazed when a few basic ingredients can turn something very simple into something over-the-top spectacular, and these mussels are nothing short of spectacular. They make just as great of a meal as they do an appetizer, making them the perfect Fish Friday meal after a long week. Just make sure to serve them with thick slices of crusty bread so that you can sop up every last bit of the delicious liquid these little beauties are cooked in.     I have never used mussels in a dish. I am having fun seeing your post and learning from your cooking.

    • They are so easy…they just take about four to five minutes to steam in almost any liquid. Very versatile!

  • I’ve never had mussels, but the plate looks delish! My favorite will have to be the cacao nib muffins! I just want to take a bite out of it soooo bad!

    • You should try them. Mussels are really all about the sauce and dipping bread into it!
