It seems that chicken tenders and Fritos are two things that simply no one can resist. And you know what? For once, it was actually kind of nice to have something in common with more than just three people on my “friends” list, even though I suspect it probably had more to do with some all-too-common Facebook algorithm glitch. When it comes to this recipe, I think I prefer to believe that this rare Facebook-commenting occurrence was because the irresistible combination of chicken tenders and Fritos was just so great, that people simply couldn’t scroll past it without “liking” or “loving” what they saw.

  • 3/4 Cup Finely Crushed Fritos

Directions:

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, whisk together the mayonnaise, taco seasoning, oregano, paprika, and pepper.
  3. Add the chicken tenders to the mayonnaise mixture and stir to coat.
  4. Place the Fritos into a large resealable plastic bag. Seal the bag and then crush the Fritos using your hands or a rolling pin.
  5. Dip each mayonnaise-coated chicken tender into the bag of crushed Fritos, evenly coat it, and then place it into a 9×13 glass baking dish.
  6. Bake for 20 to 25 minutes, or until cooked through. The temperature of the chicken should reach 165 degrees.

  • Try using this Homemade Taco Seasoning to make these chicken tenders.
  • I did not use any additional salt in this recipe because there is already a significant amount of salt in the taco seasoning and the corn chips.
  • Before coating the chicken tenders in the mayonnaise mixture, make sure to remove or cut away any tendons or excess fat.
  • I find that using a rolling pin is the best way to crush Fritos, however, you can also use a meat mallet or your hands to crush the corn chips.
  • Use a meat thermometer to ensure that the chicken tenders are cooked to 165 degrees.
  • These chicken tenders taste best when served hot and crunchy, straight out of the oven.
