Why stand over a hot stove for hours caramelizing onions when you can let a crockpot do all of the work for you? This simple and easy crockpot recipe will help you create perfectly caramelized onions in way less time with very little effort involved.
I’ve been pretty flippant with Crockpot Monday as of late and I feel like I have some ‘splaining to do. My current crockpot is over thirteen years old, and although I have treated it with lots of tender love and care, it has decided that it is ready to retire to wherever it is that crockpots go when they are no longer working properly. The final straw was when I heard the cracking noise the ceramic insert made a few weeks ago when washing it. I have noticed a little crack over the past year or two, but it never seemed to interfere with any recipe I made, so I just ignored it. As of now, ignoring is no longer an option. So, B.O.B. Bob is in charge of ordering a new crockpot online for me. This most likely means that I will be asking him every day as nicely as possible, “Have you ordered my crockpot yet?” His answer each time will most assuredly be, “Not yet.” After a week or two of me hounding him, he will finally decide to order the damn crockpot, I will fawn all over it when it arrives and most likely give it a cute name, and then all will be right with the world. Until that time arrives, here is a recipe for Crockpot Caramelized Onions.
I’m not sure if you know this about me or not, but I am lazy. Not always, but with some things most definitely. The task of caramelizing onions is one that I loathe; it requires time and patience, both of which I lack. I have better things to do than stand in front of a hot stove for over an hour while onions cook on extremely low heat and slowly begin to turn a gorgeous golden brown color. Sure the crockpot method of caramelizing onions does not result in little browned bits, but I’m all right with that. The onions are sweet, tender, and perfect for topping almost anything you can think of. I can get all of my housework done, take about a bazillion pictures of Brenna, and watch a few episodes of Penny Dreadful all while these little sweetums are cooking away. Even I don’t find it too tedious to venture into the kitchen every hour or so for a quick stir. Later this week, I plan on showing you how I used these onions, but in order to do that, there needs to be a recipe redo. The first trial use of these onions wasn’t entirely successful, and I’m pretty sure I can do better. Until then, enjoy the Crockpot Caramelized Onions, and if you see B.O.B. Bob make sure to ask him, “Have you ordered Colleen’s crockpot yet?”
Ingredients:
- 1 Tablespoon Unsalted Butter
- 4 Large Sweet Yellow Onions
- 1/3 Cup Extra Virgin Olive Oil
- 1 Teaspoon Sea Salt
Directions:
- Liberally grease a crockpot with butter.
- Peel and slice each onion in half, and then thinly slice each half with a sharp knife or mandoline.
- Place the sliced onions in a crockpot with olive oil and sea salt; mix well.
- Cover and cook for 2 hours on low heat.
- Stir, cover again, and then continue cooking for 6 hours on low heat, stirring every hour or so.
Suggestions:
- Make this Easy French Onion Soup with these caramelized onions.
- Use these caramelized onions on pizza, in pasta sauces, or for topping burgers.
- There will be some liquid present in the crockpot after the onions have cooked down. Store the onions in this liquid, but feel free to drain some of it off before use.
Improvements:
- Add 1 teaspoon of paprika to the sliced onions.
- If desired, season with salt and pepper.
