First Monday Favorites – May 2017

This Easter, give your deviled eggs an Italian twist by adding Italian herb mix and garnishing them with sun-dried tomatoes. I think that has been the hardest month so far for me to pick a favorite recipe. I mean really y’all, how am I supposed to pick between Simple Sun-Dried Tomato Deviled Eggs, Easter Sprinkles Cracker Candy, Dilly Brown Sugar Bacon BLT’s, and a Sheet Pan Chipotle Lime Shrimp Bake? The BLT’s were fairly unforgettable in the best way possible and sure to be reoccurring all throughout the summer, the cracker candy was a huge hit as usual, and the shrimp were just way too simple to whip up to impress last-minute guests. Yet somehow, I just had to settle on the deviled eggs as my absolute favorite.

These deviled eggs may be my most cherished ones so far. I know, I know, I say that every time I come up with a new recipe, but I mean it this time. At least until I make the next batch. These sun-dried tomato garnished deviled eggs are packed with flavor, have a wonderful texture, and best yet, they take very little time to throw together. Hell, I already made them three times in the month of April alone, and I’m sure they’ll be appearing at least once or twice during the month of May as well. It’s quite possible that I have fallen in love with them? Is that possible? Is deviled-egg love a thing? If it is, I’ve fallen and fallen hard.

Simple Sun-Dried Tomato Deviled Eggs

Simple Sun-Dried Tomato Deviled Eggs


  • 6 Hard-Boiled Eggs
  • 1/4 Cup + 1 Tablespoon Mayonnaise
  • 2 Teaspoons Italian Herb Mix
  • 1/2 Teaspoon Apple Cider Vinegar
  • 1/4 Teaspoon Freshly Ground Black Pepper
  • Fleur de Sel
  • 1/4 Cup Sun-Dried Tomatoes in Olive Oil & Italian Seasoning, Finely Chopped


  1. Cut each hard-boiled egg in half lengthwise and spoon the yolk into a small bowl.
  2. Use the tines of a fork to finely mash the egg yolks.
  3. Mix the mayonnaise, Italian herb mix, vinegar, and pepper into the mashed egg yolks until thoroughly mixed and somewhat smooth.
  4. Place the yolk mixture into a plastic bag, snip off the end, and then pipe the mixture into the well of each egg.
  5. Sprinkle each egg with a tiny bit of Fleur de Sel and then top with the chopped sun-dried tomatoes.
