It’s always nice to have an alternative to the standard grilled hamburger during the summer months. These cheese-stuffed meatballs are seasoned with steak seasoning, grilled, and then served with a sweet pineapple sauce made out of fresh pineapple, mayonnaise, and dijon mustard.
To tell the truth, I’m not the biggest fan of hamburgers. Hamburgers themselves I have absolutely no problem with, it’s just that I’m not a huge fan of hamburger buns. More than likely, if I’m having a hamburger, I’m eating it without a bun, topped with cheese, and alongside a generous amount of mustard or barbecue sauce. That’s why these cheese-stuffed meatballs drizzled with pineapple sauce are totally my thing. It’s all of the good stuff associated with a hamburger with none of the bun to mess it all up.
Ingredients:
Meatballs:
- 2 Pounds 80% Lean Ground Beef
- 2 Teaspoons The Great Steak of Texas Seasoning, or Steak Seasoning
- Havarti Cheese, Cubed
- Olive Oil
Pineapple Sauce:
- 2 Cups Fresh Pineapple, Diced
- 1/2 Cup Mayonnaise
- 1/4 Cup Dijon Mustard
Directions:
Meatballs:
- In a large bowl, use your hands to combine the ground beef and the seasoning.
- Use an ice cream scoop to measure out equal amounts of ground beef.
- Flatten each scoop of ground beef between your palms, place a cube of cheese in the middle of each flattened scoop, and then use your hands to pinch and roll the ground beef around the cube of cheese in each meatball.
- Brush the grate of a heated grill with olive oil and then gently place the meatballs on the grill.
- Use a pair of tongs to move the meatballs around every few minutes to ensure that all sides of the meatballs are evenly cooked.
- Grill until the meatballs are evenly browned and cooked completely through; remove from heat and allow to rest for 5 minutes.
Pineapple Sauce:
- Place all of the sauce ingredients in a blender or food processor and blend or purée until smooth.
- Serve the meatballs drizzled with or alongside the pineapple sauce.
Suggestions:
- I used Havarti cheese in this recipe because I love the way that it tastes and melts when cooked, however, you can really swap in any cheese that you prefer.
- Pinch and roll the ground beef around each cube of cheese well to ensure that the cheese does not melt out of the meatball.
- Make sure to brush the grate of your grill with olive oil to prevent the meatballs from sticking.
Improvements:
- Try using flavored Havarti cheese in this recipe, such as dill or jalapeño.
- Garnish with finely chopped fresh chives, parsley, or scallions.
- Serve with fresh pineapple.
