These sweet peanut butter, oat, and chia seed bird nest granola bites are chewy and creamy with an added candy chocolate egg crunch to make them simply irresistible. This is definitely a dessert for breakfast treat you’ll want to find in your Easter basket this spring.
Well y’all, B.O.B. Bob and I survived yet another St. Patrick’s Day together. I’m not sure how, but somehow we made it happen again, although, it was a little touch and go there at some moments on Saturday and Sunday morning. Next year, we’ll have to remember not to party so much the evening before St. Patrick’s Day, that we can’t fully enjoy the actual day itself. There were times when we totally must have looked like zombie leprechauns who were in desperate need of a nap. A long, quiet, non-green and non-shamrock wearing nap with no threat of a horrendous version of Danny Boy rudely awakening us.
So, now that St. Patrick’s Day is over, it’s time to move on to Easter. I know, I know, I usually like to ease y’all into the next holiday, however, this year there just isn’t enough time. With only two weeks between the two holidays, things are a little rushed. Trust me, if it wasn’t for Easter being just right around the corner, there is no other way I would have been outside yesterday straightening up our yard and switching out the holiday decorations as well as inside our house crawling on my hands and knees through the attic in search of our spring decorations.
Lucky for you, the morning after St. Patrick’s Day, I somehow overcame the overwhelming desire to lay on the couch all day binge-watching romantic comedies and managed to find my way into the kitchen to make these peanut butter, oat, and chia seed bird nest granola bites. They are pretty much the perfect combination of creamy, salty, chewy, and crunchy. I know that I personally can never resist a crunchy candy chocolate egg, especially when I get to enjoy one in a breakfast treat the morning after perhaps having one too many beers. Without a doubt, crunchy candy chocolate Easter eggs nestled inside of granola have got to be the best cure ever for St. Patrick’s Day.
Ingredients:
- 2 Cups Quick Cooking Oats
- 1/3 Cup Chia Seeds
- 1/4 Cup Honey
- 2 Tablespoons Light Brown Sugar
- 2 Tablespoons Unsalted Butter
- 1/4 Teaspoon Sea Salt
- 1/4 Cup + 2 Tablespoons Creamy Peanut Butter
- 1 Teaspoon Vanilla Extract
- Candy Chocolate Eggs
Directions:
- Place the oatmeal and the chia seeds into a large mixing bowl; mix until well combined.
- In a medium saucepan, combine the honey, brown sugar, butter, and sea salt over medium-high heat. Cook for two minutes, stirring constantly.
- Remove the saucepan from the heat, whisk the peanut butter and vanilla into the honey mixture, and then pour the mixture over the bowl of oatmeal and chia seeds. Mix until well combined.
- Use a cookie scoop to measure out equal amounts of granola and then use your hands to form the granola into a compact ball.
- Place each ball onto a Silpat or parchment paper-lined baking tray and then use your thumb to make a well in the middle of each ball to form a nest.
- Place three chocolate eggs in the middle of each granola nest.
- Allow the nests to sit for two to three hours before storing them in an airtight container between sheets of wax paper.
Suggestions:
- When you form the granola into a ball, use your hands to squeeze the mixture together so that it is compact. Otherwise, the mixture may crumble apart when you attempt to make a well with your thumb in the middle of it.
- After you make a well in the middle of each granola ball, use your fingers to press any crumbling edges back into the shape of a bird’s nest.
Improvements:
- Fill each bird’s nest with melted chocolate before adding the candy chocolate eggs.
- Use crunchy peanut butter instead of creamy peanut butter.
