Years ago, when I first started this blog, I had no idea that it would become a place where I would find comfort, meet new friends, vent my everyday frustrations, and force myself to become more creative. Childhood cancer is the number one disease killer of children in the United States and at this moment there are over 40,000 children currently fighting this disease and the National Cancer Institute’s budget for childhood cancer is only less than 4%. That’s a pretty low number, right?

So, what can you do to help make a difference in these children’s lives? You can donate to our Good Cookie Food Blogger’s Valentine’s Event. Today, I and over 30 other food recipe bloggers are sharing a Valentine’s Day recipe to help raise awareness and funds for Cookies for Kids’ Cancer. Below, you’ll find details on where to donate, as well as links to all of the amazing recipes being shared for this event.

Now, for a little information about these cookies. These are just like your favorite traditional peanut butter blossom cookies, only they are completely flourless and can be made using only six commonly found kitchen ingredients. I can pretty much guarantee that you’re gonna love this recipe, especially after you see just how easy it is. You might just have to force yourself not to make these cookies every single day of the week.

Ingredients:

  • 1 Egg, Room Temperature
  • 1 Teaspoon Vanilla
  • 1 Cup of Granulated Sugar
  • 1 Cup of Creamy Peanut Butter
  • 1/4 Cup Salted Cocktail Peanuts, Crushed
  • Hershey’s Kisses, Unwrapped (Approximately 18)

Directions:

  1. Preheat oven to 350 degrees.
  2. In a medium mixing bowl, stir the egg, vanilla, and sugar together until well combined.
  3. Add the peanut butter and mix until well combined.
  4. Fold the crushed peanuts into the cookie dough.
  5. Use a cookie scoop or tablespoon to scoop the dough onto a Silpat or parchment paper-lined baking sheet.
  6. Bake the cookies for 13 to 14 minutes.
  7. Remove the cookies from the oven and immediately press an unwrapped Hershey’s Kiss down into the middle of each cookie.
  8. Allow the cookies to rest for at least 5 minutes before removing them to a baking rack to finish cooling completely.

Suggestions:

  • Instead of chopping the peanuts, I use the bottom of a glass to crush them. I find that when chopping peanuts, I have a tendency to almost cut myself because the peanuts roll. Using the bottom of a glass is safer and much easier if I’m being completely honest.
  • I used traditional Milk Chocolate Hershey’s Kisses for this recipe.
  • I first baked these cookies for 12 minutes, however, I thought they could use just a bit more time. Anywhere between 13 and 14 minutes should be just about right at 350 degrees.
  • This recipe will yield approximately 1 1/2 dozen cookies. You may have a few less or a few more, depending on how large you scoop your cookies out onto the baking sheet.
  • Store the cookies in an airtight container after the Hershey’s Kisses have firmed up.

Improvements:

  • Use heart-shaped chocolates instead of Hershey’s Kisses.
  • Top each cookie with a few extra crushed peanuts before baking.
  • Use different varieties of Hershey’s Kisses in this recipe.
