After making this shortbread last weekend, B.O.B. Bob insisted that I messed up the recipe because the cookies weren’t moist. We had a little discussion on what exactly shortbread is, and how it is supposed to be dry. I joked that if I made him peanut butter cup shortbread he’d eat it and become a fan. We’ll see if I’m right.

I had a discussion this week with one of my neighbors about how we both would like to up our shortbread game. This looks like a pretty yummy way to start, don’t you think? And they don’t require a whole lot of elaborate decoration either. Even better.
